- Welcome to a new series on our channel, where we go behind the scenes at restaurants that fascinate us, to learn what goes into bringing us the lovely meals and happy times we enjoy when we eat out. This is the part II, featuring chilli fish, from Ming Room, Trincas Kolkata's Chinese dining room, which opened its doors to the public in 1982.
In this video, the Trincas chefs take us through the process of slicing fresh bhetki fillets to produce even pieces of fish; preparing one of the most crucial components in all Chinese cooking, the stock; prepping the vegetables for even cooking and texture; and finally, frying the fish and finishing it in sauce for a customer order.
This episode is not sponsored by Trincas but was made possible with the support of their incredible staff. Special thanks also to Willie Walter's Quartet for the music, recorded live at Trincas on 11 December 2021.

Food aside,Trincas has some of the best staff in Kolkata!
Not just recipe, but i learn so much from 1 video, that oil and boiling point, running water, work cleaning, oil in batter, breath of wok ❤️👍. Taking notes.
This looks incredibly scrumptious! Let me also compliment the way the video has been shot. Some of the snippets look like they were shot in a different era... A 70s vibe. In fact the restaurant itself has a 70s feel. Love it. 💕
Such a big coincidence! Getting update of this episode exactly while on my quest to eating Chilli Fish at CR Park, New Delhi. 😂❤ Could it have gotten any better! Thank you, Team Bong Eats!
Amazing cinematography and production. What a place, and what an ambience. And you captured it perfectly. Once again you've outdone yourselves. Love from the Maldives. ❤️
This is the best publicity Trinca's has ever got! Keep up the good work!
The music was the icing on the cake, or I’d say, the pepper on the chilli fish.
Delighted to see this recipe early in the morning 😇.
HIGHLY recommend this. We made it three weekends in a row. So delicious. Thanks for sharing this recipe.
