Chicken thighs are proper amazing. Bone-in skin-on is relatively inexpensive, and they're dead easy to debone. And the meat stays moister than breast meat. This looks amazing and I will definitely have to try it!

I’m also vegan so no chicken or cream. I’ll roast the garlic then mash it into a paste. I’ll soak chia seed in distilled water for an egg substitute. I’ll use arrowroot instead of flour. I’ll use coconut aminos instead of soy sauce. I will use all of your spices. After I cut out my noodles then I’ll make your sauce in the skillet using sesame oil instead of butter. When skillet is all bubbly I’ll drop in my fresh garlic noodles. I’m going to make a lot of that for my dinner tonight so I have lots of leftovers! Thank you for this idea!
One suggestion I'd make for anyone who is OK cooking with alcohol is to swap the rice vinegar in the teriyaki for mirin or even better half mirin and half sake. The bitter notes of the sake in particular add a lot of complexity to the sauce.
I made this tonight and my family loved it! I had to make some adjustments as my store did not have udon noodles. So I used Shanghai noodles instead. The flavors were amazing and I was going to try and further adapt the recipe whereas I use Tofu instead of chicken for my niece who is vegetarian. Any suggestions to help with this?
