如何用焗爐烤出美味的肉眼扒 (及背後的物理分析) !
The Rub: Black Pepper, Sea Salt, Thyme, Paprika, Mexican Seasoning
1. Marinate in fridge for 24 hours: Wrap the steak with Black Pepper, Salt, Thyme, Paprika, Mexican Seasoning in Cling Wrap
2. Preheat Oven at 125°C, grill steak (1.6kg, 3.5lb) for 90min
3. Rest for 60min
4. Preheat Oven at 250°C, grill steak (1.6kg, 3.5lb) for 20-30min for Crust
1. 用 Black Pepper, Salt, Thyme, Paprika, Mexican Seasoning 醃牛扒,然後放回雪櫃醃24小時
2. 預熱焗爐125°C,慢焗90分鐘 (Garlic, Rosemary墊底) (讓牛扒中心溫度達至 48°C)
3. 將牛扒取出,然後靜止60分鐘 (讓牛扒降溫並自己吸收翻肉汁)
4. 預熱焗爐250°C,快焗牛扒20-30分鐘 (讓牛扒表面香脆)

東尼爸爸 冰鮮牛 冷藏牛 預備時有分別嗎?
簡單嚟講,急凍牛需要多啲時間解凍,我會預早一日將佢由冰格放入蔬菜格,等佢由-18°C慢慢升返上4°C,千祈唔好心急。 打個比喻:如果星期六晚食牛扒,星期五開始醃,星期四就要開始解凍。如果件牛大嚿啲嘅話就星期三開始解凍。Time is the essence. 其實只要適當處理解凍呢個步驟,同級數嘅急凍牛比起冰鮮牛唔會差太遠。
