Having a couple kids at home, making this dish and starting it by roasting a pumpkin whole will increase the shock and awe factor up to 11

What a tremendously weird phrase to use in this context. "I'm cooking for my children, and impressing my children somehow evokes the use of the phrase "shock and awe", which is a military "strategy" used by empires involving annihilating the will of the opposing force by the indiscriminate destruction of all life and infrastructure... you know, for the kids!"
pumpkin in savory dishes is so underrated. it belongs in all kinds of recipes year-round

I make a pumpkin curry chili every fall and home can it to eat all year.
I find the only way to eat pumpkin is in savory dishes, like Pumpkin Mac'n'Cheese or Pumpkin Quiche. I made pumpkin pie once and did not like it at all.

We tried this one right away, and it's going right into the rotation. Delicious. Good body. Doesn't take long to put together, and you can do a lot to customize it. Just fabulous. It's like Zha Jiang Mian but a million times easier.
I love Japanese stir-fried pumpkin with these flavors (Just One Cookbook, stir-fried pumpkin, for those who are interested). It's such a brilliant idea to make it as a pasta. I can't wait to try this!

Just made it tonight and my wife and I loved it! We're not much for spicy stuff so we left out the gochujang and just put a little cayenne. Worked out really well still.

I just roasted 20 pumpkins from my garden. Been trying to figure out how to use it, this is amazing and I can't wait to try it!

@@dreadandfun reported it. I roasted them because I freeze the puree for pumkin pie, but it was a lot more than usual this year. I also make soup sometimes, which is a great snowy day meal.

Absolutely delicious- I made this a couple nights ago. My only complaint is that there weren't any leftovers, since it was so good my wife had me go buy more ground pork so I could make it again for a second night in a row. Added to the rotation for sure! -- PS- if you dont have a pumpkin, we subbed in a sweet potato, cooked 5-6 mins in the microwave, and it worked out great.
I made dan dan noodles today and it seems very similar, but changing up the chili oil sauce with Korean influence and adding pumpkin

Great dish! I really like it. Chinese Sezchuan style. "Doubanjiang" is really crucial for the taste. My wife hates pumpkin, so I'll replace that with a baked eggplant. Tastes different, but is very "Sezchuan" style and has about the same consistency.

I’ve never heard of bucatini before. It sounds great, since it’s hollow. Usually I go for linguini or angel hair so I can get the most sauce possible to stick to my 🍝 pasta😊. And leftover pasta dishes are always my favorite. I’ll have to search for bucatini. Thanks. This recipe gives me 💡 ideas👍.
Bucatini is such a great pasta! Far superior to spaghetti, angel hair, fettuccini, etc. because of that hollow channel inside that fills with sauce! You will love it!

Thank you chef John for this recipe I just have a frozen fresh pumpkin that I picked from my yard the only one that grew this year I'm going to use it to make pasta
We used toban djan instead of gochuchan, sweet potato instead of pumpkin and added finely chopped portabello mushrooms to the meat (salsicia meat). Topped with grounded roasted sichuan pepper corns. Haven't tried something so tasty and special in a while. Thanks for this!

Reminds me of a Thai-Jamaican Fusion restaurant I went to in Asheville NC that inspired my Thai red curry sauce, Jamaican jerked chicken, grilled red bell peppers and zucchini, and Bucatini dish.

Ok I'd definitely choose this over microwaved pumpkin mush, BUT, if not available, would totally eat the plain pumpkin mush unabashedly. Nobody takes my pumpkin.

I don’t have hoisin sause. Can I substitute it with something? Maybe oyster sause?
I know the flavours are different. But maybe it will work too?
I think Oyster Sauce would make a fine substitution. It hits many of the same notes as Hoisin. Maybe add in a pinch or two of sugar for the sweet note that Oyster Sauce lacks.

I may have to try this one. My problem is that I'm not in love with sugar pumpkins. To me they are another squash. I do like squash. For me the only thing that tastes "pumpkin" is the Dickinson pumpkins from the can. Sad I know.

I wonder how good (or bad?) this recipe works if you substitute the pumpkin with something like cooked mashed sweet potato, or possibly even applesauce. Also whether the pork topping could be somewhat reasonably be replaced with chopped walnuts or something else... 🤔
