I don’t live in nyc but I visit fairly often and I always make sure I get some spicy lamb noodles from here. They really are insanely good! Very spicy and the noodle has a delicious chewy texture

I actually tried this recipe and I had to add some extra steps in order to make the noodles. Let the dough rest for 20 min, knead it again until the surface is very smooth, divide it into smaller dough balls and smoothen every single one of those out. Flaten until about the size of the palm of your hand, cover in oil and let rest for another 2 hours. After that, the dough is fairly easy to stretch out and form the noodles. Generally, the longer you let the dough rest, the more elastic it gets.
@@mattthehotdog I didn't use their measurements because I don't have a scale. Instead I used the general ratio for dumplings (2 parts flour, 1 part water), which worked fine. The balls I formed had a diameter of about 4cm.

I eat this noodle dish a lot in China, I can vouch for Xi'an Famous that this is as authentic and as awsome as it gets. Probably the only thing different is that I always get it served unmixed in China, so that customers have to stir it together themselves, in contrasting Xi'an Famous mixed the noodle for you.
Xian Famous Foods is one of my favorite restaurants in NYC. It is the perfect example of how food transcends wealth and social status. I would much rather go to sit at a communal table along side a bunch of random NY'ers and eat these delicious noodles than go to a stuffy overpriced restaurant. Not only is the food good but the restaurant's rise is the perfect story of the American Dream. It's a true gem of NYC and I'm can't go more than a couple weeks without going back. Thanks Jason :D

Meal kits are what essentially every other restaurant is doing because its the most practical given the situation. Name 5 restaurants that use your method for Asian foods. I don't really see the issue since the meal kits are in demand and you schedule your delivery day and time.
I'm hispanic/native American and we do a chiken noodle soup similar to this. My grandma always called it ermigas or just migas. Very different than traditional migas. This is amazing.

Let me make a correction something I learned from the channel called Souped Up Recipes. She goes over the types of flour you cannot use because these noodles require a flour with high gluten content, which is how they become so stretchy without breaking. Biang Biang is the name of the sound they make when you slap them on the counter. Souped Up Recipes shows on her channel which flours you can use for this purpose, here's a hint, it's not just any old flour, it's only specific ones. Three of the things you'll notice if you have the wrong flour type is when you let the dough rest but it's not stretchy and when you rip the noodles in half the lines along the edge of the noodles are rough, not smooth straight lines, and finally the flat parts of these noodles will have breakage or a rough surface. Using the right dough will make the noodles stretch with ease, smooth on the surface, and the separation lines will be sharp straight lines.

This has been my comfort food for years that I make at home with store-bought wide noodles, basically the exact same recipe except I also throw in some sugar and chicken powder to boost the flavour
Just made this at home, absolutely delicious. Goes amazingly well with a taiwanese sausage and a soy sauce fried egg too! For those who don't have chilli flakes, lao gan ma works amazing as well. For sauce, you can get amazing results with 3 parts regular soy sauce, 1 part dark vinegar, and a touch of sugar - I'd recommend Japanese or chinese soy sauce rather than Costco soy sauce though.

When I was in NYC with my girlfriend, we once went to one of their locations, not knowing that they are kind of a big deal. We couldn't finish our dishes. I mean, it was absolutely delicious but we both ordered mild noodles and still the spice was too much to handle. Would love to go back some day and see if I can clear a plate.
Asians were vegan before vegan was cool XD You'll find many cultural cuisines in asia having very flavourful pescatarian, vegetarian or vegan recipes. This is partly because meat was harder to come by (in the past) and partly because of religious influences (such as certain sects of Buddhism and other cultural religions). It's very easy to be vegetarian or vegan when living in asia.

we have gene's flatbread hand pulled noodles here in woburn massachusetts- very simillar to these although i don't think they use hot oil. amazing texture and flavor
