Oh, a tip for the lasagna. You don't need those No Boil noodles (unless you are in a hurry). I use the regular ones and add a little extra water to my sauce. Assemble the lasagna, cover and refrigerate a couple of hours. The noodles will absorb the extra water and will come out perfectly once baked.
I pull the corners of the lasagne, (after made and ready to bake) in and add a bit of water. Seal well with plastic wrap, then aluminum foil, bake as instructed. I have yet for one to not be done, in the last 5min I do remove both wraps and sprinkle the last bit of cheese on top, broil till just melty and slightly golden, rest for 20min and serve! Love this part, "Bon Apetit", Kim style.

I used to be addicted to the food network years ago. One of my faves was Jamie Oliver back when he was 'the naked chef'...no he was never naked lol. I learned how to chop onions like you do from his show.
Oh, in addition I also precook my ground beef and throw it in the freezer. It seems like you use more sausage than ground beef, so I'm sure this would work for like sausage, or ground up turkey. It really helps to have my ground beef and my onions pre-cooked because then I'm just basically assembling things. I don't pre-cook my chicken that often, only for shredded chicken that I'm going to use my casserole but most of my chicken is not pre-cooked that's the only exception. My ground up meat I pre-cook and freeze. We are definitely a red meats family, I use a lot of ground beef. We all just like ground beef here.

“Pro” tip: Curly parsley is for plate decorating at cheesy restaurants and buffets. Lol. Switch to Italian flat leaf parsley for cooking and it will add a much better, less grassy flavor 😁
Literally just discovered this the other day! I asked my husband to buy parsley and he came home with the flat leaf one, I was like oh man wrong parsley... but dang, so much tastier than the curly stuff!

First.. I love watching you.. no matter what kind of day it is.. you can always put a smile on my face... I thank you for that. Second .. I also do not like fudge..there can be a nasty after taste.. BUT I found a recipe that I am ok with and have made for years now... 3 cups semi-sweet chocolate chips (or mix some milk chocolate in), 1 can sweetened condensed milk, 1/4 cup butter..melt together in a non-stick pot...stir until smooth.. at this point you can add nuts if you like (or not..I dont)...pour into pan - size depends how thick you want it. Let it set over night or till solid in the fridge..then cut up into bite size pieces. Adapt this to your liking.. :)

I know this might sound crazy but to my spaghetti sauce I add 1 little packet of sugar substitute (i usually have Splenda). We like it savory with a little bit of sweet and I find this adds just enough of that. Love your videos!
Hi Kim! I made the drumstick recipe tonight and it was so good! We also really liked the sauce over rice. I didn't have enough drumsticks (curbside order only gave me one package of drumsticks 🤷🏼♀️) so I added a few chicken breasts and they came out perfect. A new recipe to start the new year....YEAH!!!! Your range doesn't need replacing. It needs to be recalibrated to the correct baking temperature. Call an appliance repairman who specializes in your range's brand. It's not as expensive as you think and it's cheaper than buying a new range.
We've called to repair it but they don't sell replacement part for the oven anymore - most of the buttons don't work, that's the problem, not the temperature :). I can't program it to the temperature I want. It's over 2 grand to get a new one and I just really don't want to spend the money on it. So I'm not. lol
Best way to do the fudge is 2 cups of dark chocolate chips, 1 can sweetened condensed milk, melt in microwave. Once melted stir in 1 tsp vanilla, pour into buttered dish, stick in the fridge. The vanilla makes all the difference.

I was so excited to see this when I woke up!!!!!! Your what’s for dinner videos are my absolute favorite! I think I’ve watched them all at least 5 times! Can’t wait to sit down and watch this when my kids go for a nap!!! ❤️
Kim people add sugar to tomato sauce to take off the acidity... But bay leaves do the same... And I add finally grated carrot (which is a sweet veg) to take off the acidity (and is more veggies for the kids😉). I started making lasagne when I was 18 and left home for college... Veggie lasagne, chicken, and also fish, prawn and spinach... It's great.. Freeze the portions and eat as healthy cheap dinner when to tired to cook.. Since grown up with kids I make a beef one and freeze portions for my teenager to eat as lunch when I am at work and there is no portion of dinner left from the previous day dinner for him to warm up... He defrost-cooks in the microwave and puts under the grill for a few mins to crisp up the cheese (if he wants it crunchy) .
Oh my god, 30 minute meals was my favorite as well!!! Rachel Ray taught me so many tips and tricks that I now teach my SO!! Totally enjoy watching you cook as I sit my lazy behind on the couch just relaxing 😂

I pre-cook my onion and throw in a little garlic saute it and freeze it in batches for cooking, huge time saver. You usually don't even need to thaw out. You just throw the big frozen onion ice cube into your stuff and it thaws out pretty fast as you cook. The only caveat would be if you're making like a casserole that's going in the oven then you'd probably want to pre-thaw it. But for anything on the stove top or crock pot or instant pot you don't need to thaw it at all.
PLEASE people don’t crucify me for this. AND editing could be involved so I could TOTALLY be wrong, but while you were talking you went from separating your chicken to grabbing the Italian seasoning to using your hand to putting the garlic back in the bowl. Just be careful. Talking and cooking can sometimes make us forget that we are handling raw food. I swear I’m not being a troll. I’m a restaurant owner and salmonella freaks me out!

I have never made my own fudge! I got the ingredients to make it for Christmas and never did cause I made a million other desserts and thought “ehh, I don’t need anything else”! Lol But I totally want to try it out for myself!
Hello. The way my mom taught me to cook any kind of green but I like to use spinach. You take a pound of bacon, dice it up, fry it up. Then remove bacon to a paper towel. This part is up to you how much grease from the bacon you keep in the skillet. Then add in one onion diced, 5 cloves of garlic and saute until translucent. Then I add in 2 bags of spinach. Add salt and pepper to taste plus red pepper flakes. Then add in your crumbled up cooked bacon pieces. I have never found a kid or an adult that turns their noses up to it. It might not be the healthiest with the bacon and bacon grease but ohhhhh is it delicious.
I prep and freeze onions, bell peppers, carrots, and celery! It doesn't affect the quality of the produce. It saves me tons and tons of time! It also makes it easy to preserve my garden produce

You only add sugar to your sauce when using canned tomatoes to balance the acidity level. We jar our own sauce every year so we do not add sugar

Kim people add sugar to tomato sauce to take off the acidity... But bay leaves do the same... And I add finally grated carrot (which is a sweet veg) to take off the acidity (and is more veggies for the kids😉).
I started making lasagne when I was 18 and left home for college... Veggie lasagne, chicken, and also fish, prawn and spinach... It's great.. Freeze the portions and eat as healthy cheap dinner when to tired to cook..
Since grown up with kids I make a beef one and freeze portions for my teenager to eat as lunch when I am at work and there is no portion of dinner left from the previous day dinner for him to warm up... He defrost-cooks in the microwave and puts under the grill for a few mins to crisp up the cheese (if he wants it crunchy) .
Oh my god, 30 minute meals was my favorite as well!!! Rachel Ray taught me so many tips and tricks that I now teach my SO!! Totally enjoy watching you cook as I sit my lazy behind on the couch just relaxing 😂

I pre-cook my onion and throw in a little garlic saute it and freeze it in batches for cooking, huge time saver. You usually don't even need to thaw out. You just throw the big frozen onion ice cube into your stuff and it thaws out pretty fast as you cook. The only caveat would be if you're making like a casserole that's going in the oven then you'd probably want to pre-thaw it. But for anything on the stove top or crock pot or instant pot you don't need to thaw it at all.
You are better than anyone I've seen. I wish you would write a cookbook. Call it Kim's This and That Italian Cooking.
PLEASE people don’t crucify me for this. AND editing could be involved so I could TOTALLY be wrong, but while you were talking you went from separating your chicken to grabbing the Italian seasoning to using your hand to putting the garlic back in the bowl. Just be careful. Talking and cooking can sometimes make us forget that we are handling raw food. I swear I’m not being a troll. I’m a restaurant owner and salmonella freaks me out!

I have never made my own fudge! I got the ingredients to make it for Christmas and never did cause I made a million other desserts and thought “ehh, I don’t need anything else”! Lol But I totally want to try it out for myself!

Hello. The way my mom taught me to cook any kind of green but I like to use spinach. You take a pound of bacon, dice it up, fry it up. Then remove bacon to a paper towel. This part is up to you how much grease from the bacon you keep in the skillet. Then add in one onion diced, 5 cloves of garlic and saute until translucent. Then I add in 2 bags of spinach. Add salt and pepper to taste plus red pepper flakes. Then add in your crumbled up cooked bacon pieces. I have never found a kid or an adult that turns their noses up to it. It might not be the healthiest with the bacon and bacon grease but ohhhhh is it delicious.

I prep and freeze onions, bell peppers, carrots, and celery! It doesn't affect the quality of the produce. It saves me tons and tons of time! It also makes it easy to preserve my garden produce
In Greece our traditional summer recipe is stuffed tomatoes and bell peppers with rice and herbs or rice and minced meat.
