My mamaw in Kentucky did something similar with rice and greens and all sorts of other veggies and meats of all sorts and her gravy oh my gawd just delicious. Cherokee know how to cook that stuff like she did ❤

Interesting. But since you cooked it...I'd certainly try it. In my Scottish family we have Haggis, stuffed goat stomach. If I remember correctly, it's stuffed with goat liver, kidneys, etc. Tried it once as a kid, needless to say, I'm not a fan. But your dish looks tasty. Pair it with some rice and dat mf'n cornbread, mmm mmm. Thank ya, sir.
Haggis is made with sheep liver and lungs mixed with barley or oats and spices, stuffed in a sheep stomach. You'll never get real haggis in the states unless you make it yourself. Lung meat is banned in the US.
I couldn't remember the exact ingredients, but I remember I didn't like it.

Anybody say Head Cheese? Most never heard of it. My Grandparents ate it. Not me lol. If today’s generation saw a 1970 butcher counter they’d flip out. We’re a nation of waste . It wasn’t always that way. Great flashback in cooking.

In cajun country it is called a ponce or chaudin. Never heard it called a gog before.
My dad's side of the family is from Marksville. That's what they call it.
