I lived in Southern Germany and Austria for many years which gave me a deep appreciation for their Wheat Beers. My experience was that they never drunk them as session beers. Traditionally Wheat Beer (Weisen) is consumed as part of the Bavarian Breakfast (together with a pair of steamed white pork sausages and a Bezel with sweet mustard sauce).
After then Hefeweisen (Hefe translates as Yeast and is cloudy and mothfilling) was most often consumed as the starter, the first beer or two after entering a bar before swapping to Helles style beer in a session. This is as the Hefeweizen would start to make you feel blotted. I rarely, if ever saw a local stay drinking Hefeweizen through a session.
My favourite commercial version is Schöfferhofer Hefeweizen.
If you wanted to have a session then clear Kristallweizen is better than the Hefeweizen.
Just got my hands on bonanza and sundew on Friday. Can't wait to try them out. I appreciate you guys mentioning keeping recipes simpler. The advice on Heidelberg and cutting out crystal malt have instantly made my recipes better.

Why would you use Pilsner malt for a pale ale?

Of course, go ahead. Pilsner works great in smash beers. I've had full pilsner ipas, they were great.
Oxidation is an issue with blending. One more step to ruin your hops. In styles without later addition hops like barrel aged beers/sours it is far easier.
