  • Today is my second day in the Central Vietman city of Danang and I plan to eat as many Banh Mi as humanly possible.
    Today I'm checking out Vietnam's best rated Cơm tấm shop (as far as I can find) and it certainly didn't disappoint! The broken rice at Cơm tấm Út Vân in Da Nang is amazing.
    Best of all, I got to go back stage in the kitchen to learn how to make this delicious Cơm tấm/broken rice.

    The Vietnamese are very resourceful and creative. I saw it when I lived and worked in VN. We're talking about typical family utilizing plastic containers, chopsticks, wires, etc. as tools to do household chores. No difference in their cooking, they use so much of nature's best in vegetables, herbs, etc. in their cooking. Their using condensed milk blew me away as well. Gary, you've seen them use small rotating desk fans to flame their cooking coals, large scissors to cut meat quickly, etc.

      Yeah those fans are so cool, they also use them in Thailand on the grilled meat stalls

    You were so lucky to meet that Com Tâm lady . She let you discover all her recipe secrets . That shows how the Vietnamese people are so nice and not secretive at all , ready to share their secret with a perfect stranger

    I use condensed milk to marinate pork chops at home too. It helps lock in the moisture and keep the meet tender.

    I’ve heard of milk or buttermilk in marinades to break down and make meat fibres tender, but never condensed milk. I alway eat it out of the can when I make rum balls 😂😂 the food looks fabulous ! Never had broken rice before

    Nước mắm = fish sauce.
    nước chấm = dipping sauce.
    nước sốt = sauces...
    the first one is Vietnamese, the second one is Chinese influenced, the third one is French/English loan word.....
    The first 2 use simultaneously unless it's something else other than fish sauce, like soy, peanut, mayo ..... No need to explain the last one, it's pretty much use the same as in English
    nước lèo = broth, .
    nước canh = vegetable soup.
    nước súp = soup broth ...miscelaneous types
    Again first one is Vietnamese, second one is Chinese influenced, third one is French/English loan word

    I always still think of Vietnamese food as bland compared with Thai, but this just showed me that I know very little about the variety and wealth of flavors available. That com tam was clearly not only a hearty comfort food, but also as spicy and flavorful as anyone could wish; I could see me enjoying that after a day of heavy physical labor of the kinds I did for a lot of my working life. And the sweet potato and coconut dessert would be a fine counterpoint. I used to get something like that in my favorite Thai restaurant in NYC, but I'm guessing it didn't sell well to the locals, so it went the way of the fish cakes and fish stomachs over the years. And now, sadly, that family owned and run restaurant is gone too, possibly due to Covid and also to gentrification.

      You should try Vietnamese food to discover how delicious it is . Vietnamese cuisine has nothing to envy any other SEA cuisines

      I doubt that the Vietnamese food you had in NYC was authentic. Plus, Viet food is all about the sauce. Each dish has its own sauce. Whether it's dipping sauce or fish sauce or any sauce. If you don't use the sauce, it'll turn out pretty bland.

      @@QuanNguyen-og6pq I'm sure. Most of any food prepared for customers in the US is bland beyond belief, and with little nutritional value or real enjoyment. I make my own take on Vietnamese and Thai and Lao food at home, and its usually better than what I could get in local establishments, even if its not exactly authentic. I have all the sauces and spices necessary, but fresh produce, meats and seafood that would fit the bill are few and far away.

    If I come back as a pig, a chicken, a duck, prawn or a fish in my next life form and get eaten, I'd want to come back as those animals in Vietnam. At least some talented Vietnamese cook will make me into something delicious and appreciated by humans and not some crappy frozen tasteless meat patty served in a franchise restaurant in the West.
