First time I had Bun Cha I was working in Vietnam. After work we would go to either a tea house or a beer garden. One of the locals invited us to have dinner with is family. Vietnam is amazing country, love the people, food and truly is one of the most beautiful places I have ever been.
As long as Vietnam is still ruled by the oppressive and exploitive Communist regime, her potential remains greatly diminished. For any 1% that wants to stay, 99% of the population wants to get out, and many have risked their lives doing just that (for example, 39 doomed lives found in UK container truck recently on the news, and that's only what's been reported), unfortunately. Yet another shocking and also recent example is that during the Covid pandemic when almost all countries assisted their citizens with financial aids in one form or another, the corrupt and murderous Vietnamese Commie regime saw it just another opportunity not to help but to exploit its ruled citizens even more, essentially making money over the corpses of its citizens by presumably killing at least 30K of them, due to misdiagnosis and being and cramped into barbwired unhygenic living quarters for isolations, so that they had to sleep on the concrete floors, with inadequate food, water, or medicine, like animals, with the fake nostril Covid test kits, mislabeled as approved by World Health Organization (WHO) in Việt Á scandal, colluded by at least 4 different government agencies (Y Tế , Khoa Học, Công Nghệ, Quân y) and the top Politburo members, including Nguyễn Phú Trọng, Phạm Minh Chính, Nguyễn Xuân Phúc. Murderous Vietnamese Commie regime even had a thug murdered Christian pastor Giuse Trần Ngọc Thanh, like it has done with many other pastors across the nation. There is a reason why the current Commie Vietnam ranks at the bottom of the world in freedom of speech and freedom of the press, barely above Commie China and Commie North Korea. Similarly, its passport ranks at the bottom, 89th out of 111 countries for a reason, barely above North Koea 104th rank. even below many African nations. For comparison, South Korea 2nd rank. That's what Republic of South Vietnam would have likely been ranked among at least the top 10 had it not been invaded and occupied by the North Vietnamese Commie terrorists, aided by Commie Soviet and Commie China. Travelers to Vietnam in her current form (not at all like this before the Communists took over) should keep this in mind. Behind the beauty of the land and smiling faces at popular tourist destinations, there are a lot of darkness and sorrow, horror, and sufferings all over the country.
For me it was in Moscow, Vietnamese restaursnts are everywhere over there, funny I can't find Vietnamese food like Bun Cha or Pho near my house in Thailand even we are in the same region.
One of my absolute favorite dishes in the world - glad you were able to find a great local joint as well. I don't think I've ever drooled so much watching a video, brings back great memories of my visit to Hanoi. When you go to a Vietnamese restaurant, if you see jars or small boxes of chili - minced garlic - vinegar - lemon - fish sauce... that's when you choose to add them to suit each taste. Most of the foods with water in Vietnam have to add a lot of spices to suit each person
The Presidential thing has been on my bucket list since the minute Mr. Bourdain shared it years ago. My mouth is watering as I watch this. And of course, bringing Paddy into this just makes the video even more spectacular!
Really enjoy videos of you two together. We were there Sept 2019, and although probably not your thing, we also went to a water puppet show in Hanoi, and it was fantastic.
You need to put vinegar in “nước mắm” so it will balance the taste sweet and sound. I love bún chả so much, it’s one of my favourite dish. Can’t wait to get back to Vietnam to eat bún chả. The second shop looks very good in presentation, I will definitely try it.

That looks so delicious! I love adding things to my list to try... I might not be able to find a good version here in the States, but surprisingly enough we sometimes do have some really good authentic places. And I am all for the 'local', back alley kind of spot! :)
I haven't seen bun cha in the US, but then I don't live in a huge Vietnamese community. However, bun thit nuong can be found everywhere, which is also really good. It's the southern version of bun cha...but I'm sure bun cha is way better as some people say it's their favorite dish to eat.

Find the one that comes with everything...Max McFarlin should be able to point you in the right direction as he loves com tam (as do Sonny from the Best Ever Food Review Show and Phuc Map).

Sometimes, u have to go to super small alleys. My favorite bun cha was near my rented house. It was only 25k VND. Now, I'm craving!

Especially that auto focus, it seems very aggressive, have you changed your camera setup recently? Hi Gary ! welcome back to Vietnam . Are you planning to ride down south with your friend Paddy too BTW , for me one of the best Combo Bun Cha-Nem Ran Cua Bê in Hanoi is at the corner of Hang Dong and Hang Ma str. It`s a no name restaurant , very local , quite cheap ( 60-70 K vnd for the Combo ) but their food is delicious . You should try it before you leave Hanoi
The correct way is to have another bowl where you put the veggies in first, the noodle, the grill pork then final is a few spoons of the broth on top of it. The idea is just a right potion at the time, that way you don't get the strong taste of sweetness, salty and the fish sauce. You can always added more sauce to your desired rather than into the grill meat bowl like you do, the sauce will overwhelm the taste of everything.
That’s what I thought. They gave us two bowls in the second place but in the first one everyone was just eating out of the main bowl like we were. I will try your method next time. I had no doubt I was eating it wrong!

Bun cha is also my favourite Vietnamese dish. You guys did a great job with the video. The “broth” with the bun cha is not meant for drinking (as a soup). It is meant for dipping the food. The Vietnamese refer to it (broth) as a “sauce” for dipping many of their food.
Hubby & I are in preparation for retirement next March 6 months Australian & 6 months South East Asia so it’s been fabulous that both you & Paddy are exploring Vietnam as well , so much good info for us ❤️
Hi Gary. Tks for visiting my city. Just want to add some info. The sauce of BÚN CHẢ is made that way, a little bit sweet becoz ppl have diferent choice of taste. I normally will add some vinegar (from a bottle they put on the table.. probably the one with the garlic inside) to balance the taste for me. And I will add fresh minced garlic and chilli as well.. it wil taste even so much better. Btw have you tried BÚN TÔM (shrimp noodle) BÁNH ĐA CUA (CRAB brown flat noodle) BÚN RIÊU (crab Noodle) BÚN ỐC (snail noodle), XÔI XÉO (green bean sticky rice) XÔI GIÒ CHẢ, XÔI THỊT, XÔI PATE.. (all kinds of sticky rice). And all kinds of Eel noodles (BÚN LƯƠN, MIẾN LƯƠN)... duck and chicken noodles (BÚN NGAN, MIẾN NGAN, MIẾN GÀ..)..... Try visit the area around Hàng Da church and Hàng Da market.. streets over there offer many diferent kinds of delicacies for you to try (many of things listed above). Excelent BÚN CHẢ and Phở and Crab noodle... right next or nearby to the Hàng Da Church. Just take a taxi there take a walk around the area.. show ppl the names I have listed above for them to show u where or just walk and look for yourself on Hàng Da, Đường Thành st and streets nearby.

The times I’ve had bun Cha before, I used a separate bowl to make it up myself but in the first spot, there was no second bowl and everyone else was just dumping everything in so maybe that’s where we went wrong? The garlic vinegar helped for sure. I did enjoy it, it’s just not my favourite. Give me Bun Bo Hue any day! I will try your recommendation next time for sure 😀
@@theroamingcook if you visit Hanoi next time.. its best (in my opinion) to be done in late autumn-early winter time November - December. U will find the weather to be very pleasant and the food will taste even much better than in the hot summer. Walking around the ancient quarter of Hanoi for shopping.. every now and then stopping to have some hot food.. in that weather used to be my favorite thing to do with my sister before she left for living in the UK.
Not the broth, just the Sauce. Btw, Bun Cha was invented long long ago. The recipe stay the same for many generations. Sometimes we add more topping. And it easy to make Bun Cha, so almost the places which are selling bun cha is ok to good at quality.

@@theroamingcook there is a less famous kind of bún chả that actually pours bone broth over the bún and meat, similar to phở. We call it "bún chả chan". The traditional kind is "bún chả chấm" which means "dipping bún chả"

awesome! could almost smell it. 10:48-9: for just a moment you look faint (?transported? ) with sensory rush. if you like the roast's crispy overcooked bits, GO TO NEW ORLEANS, USA to Mother's, where the speciality (I added that heinous extra "i" for you Brits) is a sandwich of those "burnt ends." Also roast ham, and the breakfasts are bonkers.
Gary, you should have taken a separate empty bowl, then add in your noddles, herbs, veggies, then scoop in your fish sauce from the grilled meats bowls. The way you eat the fish sauces is way too much and of course its going to taste sweet. It's supposed to be poured over like a dip, not a soup. Bun Cha is the best!
the grilled meat in VN is good partly because of the burning wood/charcoal there. The same way you season the meat and grilled on american coal isn't the same.
Vietnamese food is unknown to me, I only ate the Vietnamese noodle soup, it resembles Thai food, but is something different, probably the taste too, and the food looks good to .

@@theroamingcook For a place that has more locals than foreigners and the best Som Tum Plar Rar (I think I'm spelling that right and I also think you're not a big fan of it) I've had since being in Thailand plus a whole mess of awesome dishes that I personally haven't seen before, try E-Saan Krok Mai. They also know how to hook you up if you want phet mak like you I know you do sir. A place that has only foreigners but an excellent selection of quality Thai dishes is Phensiri. For Indian food, I really enjoyed Haveli. Their Lamb Vindaloo (ask for extra extra spicy) was spot on. Their chicken tikka masala, palat paneer and chicken/lamb biryani.
Bun cha is to eat in a small personal bowl. You don't put all together and eat as a soup bowl :). That is fish sauce, not broth. Transfer a small portion of bun in a small personal bowl. add meat, veggie, and some fish sauce on top, then eat :)

Hi Gary. Tks for visiting my city. Just want to add some info. The sauce of BÚN CHẢ is made that way, a little bit sweet becoz ppl have diferent choice of taste. I normally will add some vinegar (from a bottle they put on the table.. probably the one with the garlic inside) to balance the taste for me. And I will add fresh minced garlic and chilli as well.. it wil taste even so much better.
Btw have you tried BÚN TÔM (shrimp noodle) BÁNH ĐA CUA (CRAB brown flat noodle) BÚN RIÊU (crab Noodle) BÚN ỐC (snail noodle), XÔI XÉO (green bean sticky rice) XÔI GIÒ CHẢ, XÔI THỊT, XÔI PATE.. (all kinds of sticky rice). And all kinds of Eel noodles (BÚN LƯƠN, MIẾN LƯƠN)... duck and chicken noodles (BÚN NGAN, MIẾN NGAN, MIẾN GÀ..).....
Try visit the area around Hàng Da church and Hàng Da market.. streets over there offer many diferent kinds of delicacies for you to try (many of things listed above). Excelent BÚN CHẢ and Phở and Crab noodle... right next or nearby to the Hàng Da Church. Just take a taxi there take a walk around the area.. show ppl the names I have listed above for them to show u where or just walk and look for yourself on Hàng Da, Đường Thành st and streets nearby.

The times I’ve had bun Cha before, I used a separate bowl to make it up myself but in the first spot, there was no second bowl and everyone else was just dumping everything in so maybe that’s where we went wrong? The garlic vinegar helped for sure. I did enjoy it, it’s just not my favourite. Give me Bun Bo Hue any day! I will try your recommendation next time for sure 😀
@@theroamingcook if you visit Hanoi next time.. its best (in my opinion) to be done in late autumn-early winter time November - December. U will find the weather to be very pleasant and the food will taste even much better than in the hot summer. Walking around the ancient quarter of Hanoi for shopping.. every now and then stopping to have some hot food.. in that weather used to be my favorite thing to do with my sister before she left for living in the UK.

Not the broth, just the Sauce. Btw, Bun Cha was invented long long ago. The recipe stay the same for many generations. Sometimes we add more topping. And it easy to make Bun Cha, so almost the places which are selling bun cha is ok to good at quality.

As a VNmese, the "broth" that you have mentioned is just diluted fish sauce+sugar+garlic+pickles. THAT'S IT

@@theroamingcook there is a less famous kind of bún chả that actually pours bone broth over the bún and meat, similar to phở. We call it "bún chả chan". The traditional kind is "bún chả chấm" which means "dipping bún chả"

Gary, you should have taken a separate empty bowl, then add in your noddles, herbs, veggies, then scoop in your fish sauce from the grilled meats bowls. The way you eat the fish sauces is way too much and of course its going to taste sweet. It's supposed to be poured over like a dip, not a soup. Bun Cha is the best!
in 2014 August 4 of us visited Hanoi and we ate at the restaurant including beer + food

the grilled meat in VN is good partly because of the burning wood/charcoal there. The same way you season the meat and grilled on american coal isn't the same.

Vietnamese food is unknown to me, I only ate the Vietnamese noodle soup, it resembles Thai food, but is something different, probably the taste too, and the food looks good to .
I visited Thailand and I see Nam Neung restaurant in any Thai cities. You know Nam Neung, nem nướng in Vietnamese.

@@theroamingcook For a place that has more locals than foreigners and the best Som Tum Plar Rar (I think I'm spelling that right and I also think you're not a big fan of it) I've had since being in Thailand plus a whole mess of awesome dishes that I personally haven't seen before, try E-Saan Krok Mai. They also know how to hook you up if you want phet mak like you I know you do sir. A place that has only foreigners but an excellent selection of quality Thai dishes is Phensiri. For Indian food, I really enjoyed Haveli. Their Lamb Vindaloo (ask for extra extra spicy) was spot on. Their chicken tikka masala, palat paneer and chicken/lamb biryani.
Man again why they cut the lovely chard bits of give me a tray a chard bits in bread lol

Bun cha is to eat in a small personal bowl. You don't put all together and eat as a soup bowl :). That is fish sauce, not broth.
Transfer a small portion of bun in a small personal bowl. add meat, veggie, and some fish sauce on top, then eat :)

@@theroamingcook not only is it good…it is healthy, the vegs and rice noodle. The grill porks, i know if you eat too much of it, it is not healthy, but if you eat it moderately you should be ok.
