Paella looks really good! A how to video would be interesting to see! It looks like there are a lot of people around the area where you live. Is that normal for everyday, or certain days of the week? Also, are most of these people local, or many tourists?
That's pretty normal after 10AM, and yes, most days. Most of the people you see on the patios are most likely tourists, but there are plenty of locals around. The street below me is a famous tapas crawl, so there's a huge mix of locals and tourists.
Please, avoid paella in a turist place (always had a photo outside the local). I recommend you Check in the Web "the fork" to see the best place to est really paella. In this kind of restaurant, always you need a reservation a week early. I recommend you the restaurant BORJA AZCUITA or CASA CARMELA or CASA NAVARRO to try Paella Valenciana. I hope my words help you. Sorry for my english
