Go to 0:40. You can hear a hat opening, a snare roll, and constant ride hits simultaneously. No small feat for a 2-armed drummer. So my guess is that it's the original lo-fi recording, cleaned up little, with all the bottom end removed with new drums and bass guitar layered onto it. Not bashing the folks that did it, it sounds pretty good, but I see a lot of people theorizing that this is some new master recording from the original artist that has emerged. Plus you can hear a double bass pedal in a few spots which wasn't really a thing until after the "One" video was released.
Finally, music that recorded as demo sounds not like demo, but *like the wind you came roundabout* (especially thanks for the moment in the chorus where the asset begins)
