  • Fluffy and moist carrot cake with cream cheese frosting. An easy carrot cake recipe. This very moist carrot cake is quick, delicious and super easy to make. The cake by itself is a bit bland but that's why it tastes so good with the thick layer of cream cheese frosting.

    Recipe Ingredients:
    [Carrot Cake Base (6 inch pan)]
    - 1/2 Cup Brown Sugar
    - 2 Large Egg Yolks
    - 150ml Melted Butter
    - 1/2 tsp Vanilla Extract
    - 1 Cup All-Purpose Flour
    - 1/2 tsp Baking Soda
    - 1/4 tsp Cinnamon
    - 1/4 tsp Ginger Powder
    - 1/4 tsp Nutmeg
    - 1 tbsp Milk
    - 150g Carrot
    Bake at 350°F (175°C) for 20-25 Minutes
    [Cream Cheese Frosting]
    - 110g Cream Cheese
    - 3g Butter
    - 1 tbsp Powdered Sugar
    - 1 tsp Vanilla Extract
    Instructions:
    1. Mix brown sugar, egg yolks, vanilla extract and melted butter until smooth and combined.
    2. Mix flour, baking soda, cinnamon, ginger powder and nutmeg in a separate bowl.
    3. Mix the dry ingredients together with the wet ingredients until smooth, then add milk. Continue mixing until all ingredients combined.
    4. Peel and grate 1/2 a carrot. Fold into batter.
    5. Pour batter into a cake pan, bake for 20-25 minutes at 350F.
    6. Remove from oven, let it cool for 10 minutes then take the cake out of the cake pan.
    7. Make the frosting. Mix cream cheese, butter, powdered sugar and vanilla extract until smooth. Lather frosting onto cake base. Sprinkle some cinnamon on top.
