✔How to make the best potato leaves stew. Sierra Leone style

    Potato leaf stew is a popular dish known to West Africans and enjoyed by my friends from Sierra Leone and Liberians. It is typically served with rice and it is very delicious with the secret ingredient being ogeri. Enjoy!!
    INGREDIENTS:
    8 cups chopped fresh potato leaves
    1 and 1/2 pound bone in beef
    2 cups chopped onions
    1 tablespoon himalayan salt
    1 teaspoon crushed black pepper
    1 shrimp stock cube
    1 teaspoon finely chopped garlic
    1 tablespoon grated ginger
    1 tablespoon chopped Fresno peppers
    3 tablespoons of water
    3 tablespoons shrimp powder
    1/4 cup palm oil
    2 heaping tablespoons full of ogeri
    1 sliced medium red onion added in the end (optional)
    3 habanero peppers (optional)

      That's actually very helpful and VERY IMPORTANT! Regular potato leaves are poisonous.

    You blend oguri, onions, and peppers tohther. But I like how u made it. Very quick. U also add just a lil bit peanut butter. It makes it richer

      Yore welcome! To take your ogiri to the next level, put in foil and bake for about 1 hr at 325 degrees Fahrenheit, it will it a really lovely nutty taste!

    Love your version of our potato leaves😘 you can even bake your fermented sesame seed/ogiri to bring out a certain nutty flavor to it.... you will love it even more... so after fermenting, form into balls and wrap in foil and place in oven to toast/bake until its a nice golden brown color, after it cools you can just store in freezer until you are ready to use and blend with some water as you did in the video... this is a secret so please don’t tell anyone 😜... we use ogiri in just about every plasas/soups that we make

    The stew has too much water. You need to let the palm oil cook with the onions blend and ogiri really well. When you put your leaves in, leave the cover off after a while so all the water can go. At the end you should really just have the oil and leaves should not be any water if you want that stew to be Excellent!!! Lol

    Honesty I know this might blasphemy as a Salone Bor bor. But Potato leaf and crain cray to me is better than Cassava leaves, and I love cassava leaves too.

      Yes Beverly Owusu, you most sweatily can. Keep in mind though, cassava leaves take longer to cook beacause they’re not as tender.     Ogiri is very traditional to the igbo. It can be made from castor seed, legume seeds sometimes with little charcoal.

      Ogiri is traditional to a lot of West African countries not just Igbo. Sierra Leone ogiri is made of sesame seeds and brown in color and Igbo origi is black and sometimes very hard to the touch.

    If you narrate the process while it's happening on video it would be much more easy and pleasant to watch. It's kinda hard to see you add stuff that we don't know what they are and 20 seconds later you narrate what you added, it's hard to keep the record. It's just my sugestion, better if video and voice are synchronized. Good job, anyway

      Ogeri is fermented sesame seeds, tahini is roasted sesame seeds that are ground into a paste.

    Look very nice but those potatoes leaves are big in size, you should slice it in smaller slices.

      I used sweet potato leaves. I haven’t done any research around regular potato leaves.

      Apparently regular potato leaves are toxic even when cooked which is why they are rarely if ever sold in shops.

    does the oguri have the same effect as potash?

      Potash is more alkaline in structure as ogeri is more acidic due to the fermentation. I’ve not used potash in any recipe yet.
