First time I had an artichoke I was served the whole artichoke. Didn't realize you only eat the part at the end of each "leaf?" I ate six leaves before I choked. And than my friends parents told me how to eat it.. I can still feel the scrapping feeling of trying to swallow the leaves because I didn't want to spit them out and potentially offend my friends family...lol

The way i grew up eating it is by far my favourite, you just boil the whole thing for about 30-40 min. It should be soft enought to take apart the leaves one by one. To eat it You dip the tip of the leaves into a sauce made of about a cup of water + a spoon of lemon juice or vinegar +salt and pepper. Once you reach the heart you just dip it by the stem and eat it.
Its the easiest and simplest way to cook it .

This is actually kinda random but I just thought of a French poem I learned when I was like 7 called “L’Heure du Crime” (“The Time of The Crime”). I’m just gonna write a translation here so u understand why I thought of it:
    THE TIME OF THE CRIME
    Midnight.
    The time of the crime.
    Coming from an adjoining room,
A man appears in the dark.
    He takes off his shoes,
    Approaches the closet
    On tip-toes
    And grabs a knife
    Whose steel shines, well sharpened.
    Then, hiding his weasel eyes
With a piece of his coat,
    He walks into the kitchen
    And suddenly, like an executioner,
    Before the victim cries out,
Opens the heart of the artichoke!
    -Maurice Carême
So yeah I remembered it just bc of the word artichoke but whateverrrr lmaoooo

Fun fact: Artichokes makes your taste receptors sweet. What I mean is when you eat an Artichoke anything else you eat after will taste sweet. Artichokes enhance the sweet tast of anything. Even if you eat something sour after an Artichoke, it won't taste as sour. Not to worry though, the effects of the Artichokes will wear off in about 2 hours or so if eaten.

I like your grandma. I have been growing my own artichokes for a couple years now. Still learning, but had a pretty good size crop this year from what started from a 4" pot I bought at the farm supply. I use urine for fertilizer, but the hearts are not big enough-need more phosphorus, so I just started making bone meal in the instant pot and blender. That went on the plants kinda late. I let them pop apart so I know the leaves are thickening and there is something to eat on there. The leaves/petals matter!

I have to say I tend to agree with your grandma - let's face it, you"re not going to be having fresh globe artichoke every day (and yours did look particularly pert and vibrant!) so it's going to be "an occasion" - whereas you can eat artichoke hearts any time (admittedly from a jar but they are still very good - moreover come with the twist of a lid rather than all the hassle).
Balsamic vinegar would be good ( a nice thick syrupy 4 leaf one) but a good, salty, lemony aioli even better. It's quite a novelty and turns "hassle" into fun. It also makes the job of extracting the choke a hell of a lot easier, just lightly pulling away between finger and thumb - rather than going mining with a blunt instrument!😏

  • @davidcruz8667

No. And wasting all the leaves, and introducing unwanted flavors to the artichokes. Not to mention that you used citric acid as an extra step, and the whole procedure complicates something that is very simple to begin with.
Just steam the artichokes and start eating from the outside. Less wasteful, more fun, easier, and you can add whatever flavoring you want as you go.
A lot of people use salted or garlic butter to dip the petals in. I like to make a paste out of chipotles and mix them in a little mayonnaise. When I get to the heart I just fill the concave part where the immature petals were and eat the whole thing. Two or three big artichokes with a prime rib and au jus and I'm happy as a clam.

Please. For the love of God. Its OXIDATION! NOT OXID-I-SATION!
    Oxidisation is not a word!!!

What a waste! I enjoy the bottom of the leaves like your grandma, working towards the final prize, the heart ❤️ but today’s generation is all about instant gratification!

Now this is what I am baffled by this plant/vegs. It's so big but so small in the end product. But people really enjoy it? But who am I to know when I haven't eaten it.

Easy artichoke flavor while Spring walking: pick young thistles, carefully peel - nom. So good.

Never had an artichoke before, always only really saw them depicted as anthropomorphic cartoon characters and such. I thought they were kinda like a little gem lettuce, not a pointy armadillo. Pretty cool.

I’m sure it’s delicious, and I would most likely enjoy your way, but my old school heart agrees with your grandmother. I still make artichokes the way my mom did ❤ great memories.

Never had any but I would like to try it. Just more work than I would do, especially for something that I don't know if I would like it.

Make Hollandaise, make it a bit tight mix it with the heart and the fleshy bits of the lips (has to be after initial cooking) but then stick the hondaise‐artichoke goo in with bread crumb and make a salmon fish pie with the crispy Hollandaise on top. I think that's gonna work.

I remember peeling dozens of those during my internship days. I also remember doing it without gloves and after a month my hands were full of blisters and cuts. The reason why I didn't use them was because the chef hated the use of gloves in the kitchen.

At my grandpa farm they used to grow there they would send them to the factory and can them and send them to china. It was in Mexico this was like 15 years ago. They still do it but now I think they send them to Korea too.
