You brought back SO many memories the moment I heard "I'm going to do it like Mee-Maw did", what memories of my aunt came bubbling up !! My Grandmother was treated as a queen & behaved as such, but my aunt, she really was more of our Me-Maw. Her cooking beyond compare. I can smell her chicken & dumplings or chicken & rice. She REALLY was an uncrowned queen. Thank you for this vid & Thanks to Robin

We (my family) always cook a whole fryer, let cool, and take off the bone. No shreds, but bite size pieces. We don't add the chicken back in until the dumplings are done. We also just push the dumplings down instead of stirring b/c they'll shrink/melt/break.
In our dumplings, there's a couple of eggs, salt, baking powder (b/c we use AP flour), salt, and we also use broth in the dough. I have used milk, but find that the broth makes better dumplings. The only fat in them is what's in the broth. My mom always pinched her dumplings, but i.like rolling out b/c it goes faster. Also, I dust the excess flour over the top before pushing dumplings down in the broth...it thickens the broth a little, like a gravy.

@@SweetPea1964 what is wrong with other's giving their recipes for comparison? It gives the viewers, options.

    • @SweetPea1964
      @SweetPea1964 5 років тому +16

@@pixibelle3282: 1.What gives "VIEWERS" options, is watching another video--or making their own video.
A person doesn't do a video to have someone in the comment section give an ENTIRELY DIFFERENT recipe--that is just disrespectful. As I stated, if said commenter wishes to upload theirs for critique, that would be great, but stop with the armchair quarterbacking.
      2. You're right--there is nothing wrong with saying that you do one or two things differently, in fact, a lot of people appreciate that--I do it myself, and I enjoy reading those kind--but we are NOT changing the whole dang thing! And we always make sure to thank the uploader and compliment what they did in some way.
      3. The manner in which that was done made it apparent that Helen thought HER way was so much better (which is obvious with not saying a single thing looked good, or that they appreciated the video, etc). You may not take issue with that, but I do.

No Denise, my mother made the best.😁lol ..same here, C&D was my favorite and i never learned how she made them before she passed 25years ago..i know she rolled her dough out n cut it. She used dark meat, bone skin and all..but she also used half n half n butter..so it was more like a thin white gravy kinda with fluffy squares of dough and chicken..my mouth waters just thinking about how they taste.i don't think i could ever come close to replicating it, so i don't even try. I want to remember how my moms tasted and not mess it up traumatized by how mine taste😝

I wish I had paid closer attention to her when she was still here. I always like to think that she is somehow closer to me, watching when I use her bowls, spoons, etc. I try to keep my things out and have my granddaughter watch me do things so she will learn too. I hope she will think about me when she becomes a grandma too!

I love the old time cooking.
That's when food was the best. Stewed squash, fried okra, fried green tomatoes,
Turnip greens, crisp cornbread cooked in an iron skittle. Man I could go on and on I am 64 and still want the old time cooking. And I still cook that way.

Love this video! I grew up in Kentucky and my memaw always had sweet tea and biscuits, garden fresh potatoes, green beans, tomatoes, turnips and canned the best apple butter I've ever had in my life to this day. I've tried to find apple butter as good as hers all my life. Y'all are country folk, I can tell lols. It's a beautiful life and great tasting food that you just can't find in a cook book. I have dishes from my memaw's house and from my aunt monkey tail that I wouldn't trade for no amount of money. I still make an old family recipe for holiday dressing that has been passed down since civil war days. I agree our gadgets help us make cooking easier these days, but the traditions we pass down are priceless! Thank you for sharing your kitchen with me :)

Well howdy-do neighbor... I'm from Lexington NC too and I love chicken 'n dumplings. My kids grew up on them and my youngest son insisted that I make it for his wedding meal. His college friends loved it when he come home for the weekends and I send him back a big container for him to share with his friends, they'd come home with him on some weekend just for my chicken 'n dumplings. I received so many hugs around the neck from so many college young men.

Oh Lawd! I. Have. Seen. Everything. Now. Shredding chicken with an electric hand mixer. I can't thank you enough.. Married 51 years and I'm so fed up with hand shredding chicken. I nearly had a heart attack when I saw that bowl with the shredded chicken. You are just too, too, too awesome.
I adore chicken and dumplings but I have the worst time with it. The recipes I always see of them says to put the dumplings in and put a lid on them and NEVER take a peek at them until about 20 mins. Never works for me and I'm tired of losing a whole pot of chicken trying to make dumplings.
I feel confident now that I'll do just fine.
You are a real gem. Thank you so much.

I also have a wood tray my Grandpa made for Grandma for serving crackers on chili con carne night. My Mom had some little brown melamine bowls that I still eat my Cheerios out of. When I touch these things, it brings back sweet memories. Thanks for the dumpling demonstration...I’m going to make some while we’re camping this weekend. I expect I’d better make plenty, because our neighbor campers will probably want some if it smells as delicious as it looks!

I wish I had smell-a-vision! Thanks for the fun video and the awesome mixer trick. I have kitchen cabinets and drawers full of bowls and cups and tools from my mom and my aunts and some items that were my grandma's. I love all that "vintage" stuff and I use it everyday when cooking or baking.
This is the first time I have ever seen dumplings made without eggs. I didn't even know it was something that people do. I can't wait to try this and see how it goes. Thanks again for sharing and taking us into your kitchen with you. 😊 ❤️

@@rhena97 My Grannie ALWAYS used buttermilk and Crisco, my mother-in-law just uses flour, milk or water, and that's it... very bland but GREAT with butter... Some people were just too poor to afford buttermilk, butter, milk, etc

Great recipe. I had never made chicken and dumplings before. Your recipe was so easy. Loved the mixer trick. Both my neighbors said it was wonderful. Thanks

That's exactly what I do with canned green beans...I always dump out the liquid and rinse the beans in the can and then cook them in fresh cold water...always makes them taste like they were fresh...and of course fatback or bacon grease. I miss the little farm that my late hubby and I had...we raised our own chickens and the taste of the chicken and dumplings were so much better...can't get that with store bought, but since that's all I can get now, that's what I use. Your chicken breast way is really better and healthier too...so, I am gonna give it a try too. I wish I had some of my Grandmother's kitchen stuff...all I have is a yellow melamine creamer that I keep in my flour container, from my mom. I have both of my Grandmother's white church gloves though...I love them. When I make mine...I just drop mine by teaspoon...I think I need to try your way, now that I see what you are doing. That sure does look good and I can almost smell it from here...lol Loved your video...thanks so much for your recipe too and the time it took you to make it and upload it here for all of us to share too. God Bless you and your family...💖🙏💖

Your chicken and dumplings look good. You are the 2nd person I've seen using a mixer to shred chicken. That is a great idea............. I make dumplings from scratch but when I want to take a shortcut I buy canned biscuits and cut them into pieces and use them instead. The canned biscuits are great in pea dumplings too. ..... The canning process is what preserves the green beans. There are no added preservatives in that brand of green beans. Aside from the green beans the only other things in the can are water and salt. If you need to watch your salt intake, draining them is a good idea BUT you are also dumping the nutrients that leach into the water during the canning process. To get the nutrients you need to consume the liquid too. These aren't really any different than what you'd can at home except for the fact that they are in a can vs a jar.

For those of you who may be wondering how much shortening she scooped out of the container, she scooped out about 11/4 cups worth.

I love you mentioned Dollar General, when I managed them as soon as I started stocking the spices I would always grab up a case of each. I live to cook, they are great and I cook a lot.

You're so right!!! I'm 5th generation and have kitchen stuff still in use. You know the phrase "she who dies with the most kitchen gadgets wins?"
Well, that's me. Metal measuring containers have indentation marks so they don't rub off like the glass containers do.
