  • This video shows how to make fermented rice. This is an age old method of soaking leftover rice in water overnight. The next morning the fermented rice is eaten with the addition of salt, curd .
    Pieces of onion, Vadu manga pickle o fried curd chillies are had as accompanimentIt is an excellent coolant for summer.Rich with nutrients, it helps to increase the availability of micronutrients too.
    Ingredients
    Leftover rice
    Water
    Curd
    salt
    Onion/curd chillies/mango pickle

    Well said, even still our family using this during Q2 (I.e) from April to June is a must breakfast.
    Nowadays people just copying other places food and forget the basics which is mandatory according to your weather condition.
    One more info about pazhayadu is very good for hair too..

    Remembeted our childhood days. Even we used to have it. We used to call it "Pazhe Chadham". Thanks mami for reminding us of Pazhayadu. I will start having this from tomorrow itself.

    In west Bengal, we also make same kind of food, which we call "panta bhat" ,only difference is we don't add curd. But adding curd will enhance taste and nutrients. Thank you for the recipe.

    Thks Gita Ma'am for sharing this highly nutritious recipe which was once upon a time a must in every household...even in my Ammumas place .....we used to have this Pazhakanji along with ripe mangoes &spicy green chillies mixed into the kanji...it was really vvvv cooling for our system especially in Summer .

    Oh! Great. I too went back to my childhood days. We ate this delicious rice with great relish , sitting around our auntie who gave the rice balls in our hands along with a spoonful of reheated left over curries.

    you can grind the fermented rice in the morning along with butter milk salt and asafoetida in the mixi it will be so tasty . if you want you can add salted NARTHANGAI PICKLE in the rice when soaking the rice at night it will give good taste no need to add salt.you can drink this along with small onions and mango pieces you can take this for travelling also

    Madam, I have a question. Cooked rice generally tend to get very stale and smelly very quickly during summer season if not kept in refrigerator. So can only the normal water will preserve this cooked rice from getting stale overnight? please guide me because I really want to try this recipe . This recipe is great for bachelor men like me

      @@merlinfrancis9754 Just tried it last night. Cooked rice around 9. Around 10 PM let it soak in sufficient water so that rice get submerged. Rice was NOT stale in the morning. it was fine. I ate at 9 AM with curd, onions, mango pickle, and fried chilies. It was good and very filling

      Actually adding water prevents the rice from becoming stale.
      Ensure that the whole lot of rice immerses completely in water.
      Normal plain water is sufficient.

    How much time we have to soak rice in water & how much time we have to soak in curd. May we take this recipe in winter also. Also tell me that this recipe is morning breakfast or may be taken anytime

      Not suitable for winter. Add water to uptp two inches above rice layer and keep overnight

    When was the rice made ? Can rice be made today morning left outside and add water during night? Can this be eaten during monsoon ?

      Rice made on the previous evening can be added to water and left overnight. It is better to have in summer. Avoid in monsoon

    In Kokan area of Maharashtra the same way rice is prepared but it is cooked again with buttermilk plenty of water n Metakut ( prepared from gram flour).

    Can we use fresh rice - like if we cook rice in the morning (8am) and eat for lunch around 1 pm? Also should we eat only curd rice or like if we are eating for lunch can we eat 1 roti with sabji and then this rice?

      This is usually made with rice soaked overnight as this fermentation helps too cool the body . You can eat roti and curd rice too

    In Bengal we too hv d same water soaked rice. Bt nt d curd. It is called Paanta Bhaat. Bhaat means rice in Bengali. Very filling Nd cool.

      We can prepare rice in different methods. Draining the rice helps to get rid of starch

      If you keep overnight outside on countertop it is fine. Do not keep in fridge. It will not ferment

      @@GitasKitchen I am doing it on the countertop only mam. Using leftover basmati rice. Next morning it remains as such, color of water doesn't change to white and rice is also more or less in similar state. It's very weird.

    we do like this, but very differently. Previous night , in a vessel,. take some rice, into it, add, some small onions,. curry leaves, kanthari chillli,. ginger and salt,. all crushed...and add buttermilk, mix it well and keep it tightly closed, next day morning we will have it,. it is sooo tasty.....i am making it daily now....

    Thank you ma'm..didn't know about this. I know in Goa my grandma would use leftover rice from previous night, add some onions, green chillies, salt and make like bhakris. I will definitely try this...so the rice ferments yeah and doesn't get spoilt or go bad after adding water? does it work with rice made is rice cooker or the traditional way where we drain the water/starch away?

      When you pour sufficient water over the rice, it will not become stale. You can do this with rice cooked in any method

      That is the smell of fermented rice I hope you had added plenty of water as otherwise it may give a bad smell

      Keeping inside fridge doesn't allow it to become fermented.
      Moreover rice becomes stiff.
      Nothing to worry.. just ensure that the cooked rice completely immerses in water.. Actually addition of excess water prevents rice from becoming stale.
      Room temperature is the requisite.
      This is a great food for gut health, hope it helps in breaking down the carbohydrates much easier.

    Age old tradition seems good. But the south Indians follow Satvik food concept ... That is consume food within 2/3 hours of preparation... Any info abt this??

      It depends.. This was mainly for people who were younger and had to do heavy work.. The older generation do not consume it if it comes in the way of their puja restrictions

    Thank you.. Is it like ganji ..but ganji v prepare in the morning itself.. Something new.. I never knew dat such a breakfast can be made with left over rice.. Can I heat it without adding curds.. Or can I add coconut milk

      No need to heat.. especially it's not advisable to heat it when added with curd.
      Very good food for people who suffer from ulcer and digestive issues just because of the amount of probiotics present in this fermented rice.
      Heating might destroy the probiotics.
      Addition of curd is highly recommended.. it is also okay to add freshly extracted coconut milk.

    Left over rice means rice cooked previous night? Right? Or should I cook it in the afternoon itself? Vadumanga looks tempting. You took me to my childhood. We eat fresh rice cooked in excess water called mau bhaat with curd as breakfast. Will try this.

    Mam, instead of salt, can we make it sweeter by adding sugar or jaggery powder or mishri..

      You can just omit the salt and have with fresh curd. We don't add sweet to it

    This is eaten in Bengal and Assam too .
    The best breakfast is Rice . Iran and Japan also ate rice for breakfast . The Japanese ate fish too in the morning .
