Dear Molly, I think of myself as a beginner in many aspects of this beautiful skilled labor. I apprenticed from age 14, now I am 78. (Anyway, that's not the issue.) Using only hand push method for very many years I have some suggestions, if I may share. The method You are holding the graver is perfect for pneumatic engraving. At traditional hand push engraving your finger should be at the middle of your thumb's soft pillow with the graver between those two surfaces, with a steady firm grip. Your guiding finger is your thumb, pressed against the material's surface. Watching your demonstration, I am under the suspicion that the full length of the tool was too short for your hand size. The handle must be pushed by the last bone near your wrist that's under your hand's pinky pillow. After gaining control the angle of the graver can be increased, still keeping the thumb on the material's surface. I would be very pleased if You find my remarks useful in any sense.
