Pork Rind Cinnamon Rolls

Cinnamon rolls? Yes. Cinnamon rolls. For the carnivore diet? Yes, why would I lie to you? These are super simple to make and have a glaze that can be used on anything!

RECIPE
5 Oz Pork Rinds, Ground
5 Eggs
1 1/2 tps Baking Powder
2 Tbsp Collagen
5 Tbsp Allulose
1/4 Cup Butter, Unsalted
1 tsp Cinnamon
1/4 tsp Vanilla Extract
3 Tbsp Heavy Cream
1) In a bowl, add in all of your pork rinds, eggs, baking powder, and 1 tsp of allulose. Combine and set aside and allow to hydrate.
2) Melt your butter in a microwave or oven a burner and add in 1 tbsp + 2 tsp of your allulose, cinnamon, and a pink of salt. Combine until homogenous.
3) Grab a baking sheet and line it with a silicone baking mat. Pour all of your pork rind mixture on the middle of it and spread it out and make a rectangle. Place this into the oven at 350ºF or 176°C for 5-7 minutes or until just set. Let rest for about 5 minutes so we can handle it.
4) Grab your cooked pork rind pastry and spread all of your butter mixture onto it, leaving about 1 inch at the end open to roll it up to. Roll it up and press firmly on it for about 1 minute to ensure it sticks together. Cut into even pieces.
5) In a bowl, add your collagen, the remainder of your allulose, your heavy cream, and a pinch of salt. Whisk to combine. Pour over your cinnamon rolls and serve.

It's so nice to have such a seriously low carb/carnivore/keto-friendly version like this, of cinnamon rolls!
The texture is a bit spongey, with very little eggy aftertaste. Very filling and satisfying. It's really nice when you're craving a sort of cakey-pastry-like food on Carnivore/Ketovore/Keto.
The *only* thing I'd change, is I will *double* the icing, as it really could use a lot more to better moisten and bring the flavors out.(For me, anyway!)
Other than that, it's a serous winner, and I'll be making them again for sure!

I have missed cinnamon rolls. Having lived in Sweden for two years back in 2015, they now have a special place in my heart. I might try adding some cream cheese to the icing because well, I love cream cheese icing😋

If you can use glycine, it may be to your benefit. I don’t know if you’ve heard of it, but it is an amino that our bodies use. Apparently it is the perfect sweetener, besides allulose for carnivore diet.
I don't want to know someone that doesn't use ALL the icing!

Do you think brown butter would work as a sweetener? Maybe replace one of the eggs with brown butter?
Does allulose give you stomach issues like other sweeteners? I will probably use a little bit of honey if I am going to try this some day (right now I'm going toward the lion diet for a while though) bcs I don't really get sugar cravings from using that and I need very little, like a teaspoon. I'm not really into things that tastes too sweet, but I noticed after trying to do the Carnivore cake that Kelly Hogan does that I would have preferred a touch of honey actually. (And real vanilla.)
But these kinds of recipes are awesome to have for those special occasions and WAY better than eating the "regular" stuff!
I would also mix the batter in my mixer for a perfectly smooth result.🌞🌺
Allulose doesn't seem to do much to me, but I don't take it in on a regular basis at all

You can get by with a small baking dish or 6-9 inch cast iron pan

Thickens. If you think about something like demi glace, it's thickened because of the high content of the gelatin/collagen from the bones that made the broth.

I haven't tried these yet, BUT, I think Wendy's Power Flour (coined by Indigo Nili) which is PSMF bread, dehydrated then ground into flour, might work. You'd probably have to play around with the amount to get a consistency similar to that of the pork rind version.
