Egussi is pumkin seeds. The pumkins are left to mature and rot in the farm, then they are broken snd the seeds are collected, washed and dried. The seed then removed from the shells snd ground, then used to cooked the egussi soup. The recipe for egussi soup duffers from regions to region but based on whst the soup is to be eaten with (fufu, rice, plantains or egussi pudding) the consistencies will be similar across those rgions.
