Cold mash rounds off rough and astrigent flavours from malt. Gives a smoother beer than to hot mash roasted and dark malts. Worked excellent in my first Baltic Porter.
I usually brew 27l biab batches which gets a bit boring and takes most of the day, and since the baby arrived there is not much time for brewing. I wanted to increase the frequency and variability of my beers, that is why I ordered this 10l keg for shake&brew, and low abv pale ale was the first I wanted to try. I wanted to use hopped spray malt from muntons, anyone tried that before? I guess that if I get 500g of that and add 250g of dextrose. That would get me to around 3.5% and 20ibu. After fermentation adds a hop tea or dry hop bag for some extra aroma to a keg, purge with C02 and transfer the beer to a keg. Cold steeping would open an option for darker beers to my new plan...
Cool! I have not yet tried the prehopped dem. I will do that. Hot steeping the dark grains on brew day is also an alternative. I wouldn't go over 30minutes though.
