The earthy Mushroom Pasta Recipe that makes MISO HUNGRY!

  • LEARN HOW TO MAKE A FAST MISO MUSHROOM NOODLES RECIPE FOR DINNER TODAY!
    LAY HO MA! There's never a shortage of delicious noodle recipes especially when paired with delightfully earthy mushrooms! Join me in this episode and learn how to cook a quick miso mushroom noodles recipe right at home!
    Ingredients:
    1/2 cup cashews
    1 generous tbsp miso paste
    pinch of salt
    1/4 tsp onion powder
    1/4 tsp garlic powder
    pepper to taste
    1/2 tsp toasted sesame oil
    1/2 cup water
    170g spaghetti
    150g fresh shiitake
    1 tbsp white sesame seeds
    drizzle of olive oil
    1 dried shiitake
    Directions:
    1. Bring a pot of water to boil for the noodles
    2. Add the cashews, miso paste, salt, onion powder, garlic powder, pepper, toasted sesame oil, and the 1/2 cup water to the blender
    3. Cook the noodles to package instructions. Stir the pasta occasionally
    4. Slice the shiitake mushrooms. When the pasta is done, reserve 1/2 cup of pasta water. Strain out the pasta and set aside
    5. Pour the pasta water into the blender and blend on high until liquified. Set aside the cream sauce
    6. Heat up a nonstick pan to medium heat. Dry toast the sesame seeds for about a minute. Set the sesame seeds aside and place the pan back onto medium heat
    7. Dry sauté the shiitake mushrooms for about 4-5min. Add a drizzle of olive oil and sauté for a couple of minutes
    8. Add the noodles and cream sauce. Cook for another 1-2min (if the cream gets too thick, add a splash of water to thin it out)
    9. Add the toasted sesame seeds and mix
    10. Plate and garnish with freshly cracked pepper and shave over some dried shiitake

      Nice touch with grating the dried mushroom over the top👍 I bought some dried fungus from my local asian market. Could you do a recipe and give me/us some inspiration in what type of recipe to use them in? 👩‍🍳 That would be great.       @@shilpajn12 Hi, I am from Vancouver. You can buy Miso paste at any Asian supermarkets, or supermarkets that carry Asian produce. They are usually placed in the produce section surrounded by tofu, wonton wrap, kimchi, etc. Hope this helps.

      Thank you so much for all the great recipes. I know that you have allot going on however I live in the Caribbean and cannot get allot of the seasonings that you recommend. For example Korean Pepper power. I cannot find it here
      Is there a site on line that you recommend to shop for all these exotic seasonings????. I cannot wait to make Chilli oil. Let me know if you do know of an online shop. Thanks Nicole

    This was amazing, and so easy. I used plain walnuts instead of cashews, and king oyster mushrooms as these were both what I had on hand. This dish is definitely going into the weekly rotation. PS - make a double batch of sauce, it reheats well. I used it as a warm dressing on chargrilled zucchini and tofu sandwiches for lunch the next day.

    I'm intrigued that you put the mushrooms in the dry pan for a little bit and then add the oil. I haven't tried that before. I also LOVE the idea of grating on the dried shitakes at the end. Can't wait to try this

      Dry sautéing mushrooms is a new, at least to me, technique. The science is sound and the results are great. I’ve done it with no oil at all and the results are good. However, in this recipe he is right on. The oils adds a needed dimension.

      It is not exactly a rocket science ;) I have been doing it for half of my life without knowing it is such a big deal ;) Start on medium heat until mushrooms start releasing liquid and then you can crank up heat, so there is less risk of burning. Technically you don't need oil for frying (or need very little) if you have a non-stick pan, but olive oil has a great flavor. It is good to reduce water before using mushrooms in pizza for instance.

      It retains texture. They can get soggy if you sauté them in oil right away.

    Caramalized onions would go great with this! Maybe deglazed with a bit of dark soy sauce or a nice pinot grigio. Spice it up with some gochugaru maybe.

    God bless the UA-cam algorithm! These vegan recipes are fantastic. I'm not vegetarian or vegan, but I try to prepare at least two vegetarian/vegan meals during the week. I really wanted to do the cashew cream (which I've never done before), but my oldest daughter has a serious nut allergy so I sadly had to use dairy. Your recipes are great!

    3:21 shiitake mushroom stems are woody -- you could chew them all day and they still don't break down. it's best to remove shiitake stems before slicing the caps. save the stems to make soup stock, where they add lots of great flavor.

    This was excellent. Deeply flavorful and so easy to make. My only change was to add spinach and sauté it with the mushrooms, for a pop of color and extra nutrition and to use up the spinach because like me, it wasn’t getting any younger! Or should I say yeunger?

    I just made this, I “watch” a lot of your videos and finally tried one. It was very good! First time I dry sautéed mushrooms and understand why now. I didn’t blend the cashews enough so some chunky bits but added nice texture. Next time might soak a bit before. Thank you, will try other recipes soon!

    This recipe has become a real favorite of mine! I've incoporated a few tweaks: in the name of Macrobiotics, I substitute walnuts for cashews, and use whole grain noodles -- whole-wheat fusilli is a favorite. I've also tried different kinds of fresh mushrooms, albeit with varying results (oyster mushrooms were a loss, being too soft to withstand the dry sautée process, and having too little flavor to boot). But for the final dried shiitake garnish, I grind a whole dried shiitake in the mortar with pestle, along with the black peppercorns. Finally, I use a super-efficient method of cooking the pasta that comes from J. Kenji López-Alt's cookbook "The Food Lab": put the pasta in the empty pot, add enough water to cover, add salt, bring to boil, then turn off the heat and cover, letting it sit for one minute less than the prescribed cooking time (for this recipe I do two minutes less, to compensate for the pasta later cooking in the pan with the sauce).
