This is how it is done in Australia, my friend the gap is covered by a molding they call cornice which is made with the same materials as the plasterboard ( that is what they call drywall downunder). Just thought you should know.

Old Pro Tip: Use a rasp to clean your edges up, but not the one they sell in the store because they break too easily. Take a horses rasp and use your chop saw to cut 2 rasps that will last and really clean up the edges.

Ceilings first! Ceiling board is too short can still see the framing. If those are treated boards and regular drywall screws the screws will be disintegrated in a few years from the chemicals.

I'm a little confused why the last piece of sheet Rock was flush with the piece of framing wood but it did not cover it up. Won't it be hard to plaster over an exposed piece of wood?? I can't imagine that would look very good.

Always board the ceiling first, put any gaps at floor level

And I'm in a country that uses CCA, Boric & LSOP treatments. The CCA is used extensively.
This lumber is spray treated with Boric acid for insects, it’s not pressure treated. Different green.

You should always hang drywall from the top down to eliminate gaps in the ceiling angles.
