Delicious and super soft, beautiful natural colour of purple sweet potato, low sugar recipe & simple ingredients.
材料:
200克粘米粉 200g rice flour
60克细砂糖 60g castor sugar
550毫升水用来煮160克紫薯
(需要400毫升提取水)
550ml water cook with 160g purple sweet potato
(400ml extracted water is needed)
1茶匙食用油 1tsp cooking oil
酵母发酵部份;For yeast fermentation:
4克酵母 4g yeast
1/2汤匙细砂糖 1/2 tbsp castor sugar
30毫升温水 30ml lukewarm water
蒸盘尺寸18cm(ID)x 5.8cm(H)
Pan size 18cm(ID) x 5.8cm(H)

我試做成功了,只是沒有甜味,我只好在白糖糕表面塗了蜜糖。60克糖太少了,适合我一位血糖偏高的朋友😁,照粉和水的份量,最少可以放100克糖。

Chị ơi bột gì vậy 200gr và160 gr là bột gì em cám ơn chị nhiều bánb đẹp lắm
cảm ơn bạn đã ghé thăm kênh của tôi. 200g là bột gạo. 160g là khoai lang tím. Bạn dùng 550ml nước để nấu với 160g khoai lang tím, sau đó lọc lấy 400ml nước chiết khoai lang tím.

可以用10克紫薯粉来代替紫薯, 因为紫薯粉里有纤维放入太多会影响Q軟弹的口感,水和粉的比例是2份(水) :1份(粉)。谢谢

番薯水 要幾熱?
用小火煮到水滚, 之后直接倒了糖搅到糖溶化快快将它倒入粘米粉处来汤面, 和糖溶化后的番薯水的熱度大楷是70-75℃. 详细做法请參考视频.谢谢
紫薯水待凉了才倒入还是可以直接倒入粉内
过滤出的紫薯水和糖搅拌完全溶解后它的温度已有所下降了,无需待涼可直接慢慢边搅拌边倒入粉中, 只是面楜要冷却后大概室温36℃或以下方可把发酵后的酵母倒入其中, 不然会它会被烫死. 谢谢

@@reginetang6921 早上好,很高兴听到你也试做成功了,甜度是因人而异的,如果你喜欢吃甜可多放些不会影响成品的。关于颜色方面不夠深紫可能是你所用的不是深色甜紫薯,它和一般的紫薯有很大差别在甜度和深紫色方面. 再下来就是在提取紫薯色素要以小火煮特别有效。如果成品硬了点可能是酵母发酵不夠到位又或是蒸盘的底部低到接触到沸腾的水。谢谢
