Because all of them are mostly rich and have class. Cell phone usage is done by middle class people who feel that they are losing out something and feel the need to quickly record. There are some etiquettes rich people need to follow to stay in the circle, otherwise they will be treated like new money and they will be shunned.

Just another example of James Horner’s incredible ability to tell the story of the films he worked on through the music. The pennywhistle for Jack, a traditionally lower-class instrument, and the beautiful French horn, an expensive yet powerful instrument capable of gentle, deep sounds to represent Rose. The violins to echo the musicians onboard the Titanic, all of it just tells the story in such a unique and beautiful way, you could almost do a shadow puppet play of the film to this soundtrack and still understand every beat!
