I've made this recipe several times, and found that it works better if you boil red potatoes the night before and let them cool in the refrigerator overnight before cutting them up and frying them the next day. The insides stay softer while the outsides crisp up nicely. Plus it takes a shorter cooking time.

I think it will fit in nice with my chopped onions, bell pepper, garlic & hot dog pieces (all together in a smaller amount than the potato) or i'll leave out the hot dog & i'll season with salt, pepper/paprika & Italian seasoning, cooked in lard or 40/60 butter/oil about 1/2" deep. I also like to M-wave the moist potato that's cut like yours to soften em a bit. It shortens the fry time about 20%, I cook it at a bit higher temp & I get my crispy, soft inside delicious HF's, but they'll be even better cooked in bacon fat with pieces of tasty bacon. Next time try par boiling the potatoes until about 80% cooked, and let them come to room temperature for about 2 hours. Then fry them like you did. Wow they'll be at a whole new level. Definitely delicious frying in lard.
Preheat oven. Roasting Tin. Bacon pieces and chunks of potato same size. Season and add herbs and spices. Drizzle with oil. Put in oven at 200 for 30-40 mins. Set a timer. Easier.
I take my Bacon Grease, keep it in a jar, and I fry my bacon in a hot pool of that grease then I throw in some potatoes right in that pool after and then I keep the grease for next time
Not sure why but I see the one chuck of potatoe is near twice the size of the others and it really bugs me, my guess is that will pass once I taste that bacon fat all fried up on it!!! Ah yeah!
