Wow, i was searching for madeleine flavoring ideas and you just posted this video! I want to make some fancy ones as a gift for my boyfriend’s parents !!!
These look so delicious! If I were to make a matcha version, how much powder should I use and do I lessen the amount of flour? Or can I add matcha powder to the melted butter instead?
good question! I think it's to create the density of a butter cake but with the texture of a sponge. the air in madeleines is created by beating the eggs and adding butter straight to it will deflate it much more. this is however from my own speculation as I haven't seen anyone else explicitly explain it, but I did find a difference in the batter when I experimented with switching the order of when I add the butter
@@JasmaFusionCuisine Usually it's about "fat first == less gluten", meaning less spongy. So what you said makes sense. I just had a feeling those cookies are more crumbly, less spongy. But just a feeling, I've never had them
I'm convinced that you owned a patisserie in your past life (and are more than capable of starting your own in the future)

Can the batter keep in fridge overnight and bake off the next day? Great flavors! Can’t wait to try.
yes it can!
Already bake, for me coconut earl grey the best, espresso #2, for rose I have hard time to find the rose. Thank you so much Jasma.
These look so tasty!!! Can you replace the coffee with matcha? I don't really like coffee😅
You can but just reduce the flour by the amount of matcha you add!
So pretty and delicious. How long it can put in the fridge?
do you mean for the batter or after it's baked?
@@JasmaFusionCuisine sorry I meant after baked. 🙏😄
Hi Jasma, is it ok if I used burn butter? Thank you for wonderful recipe.
do you mean browned butter? if so, absolutely!
@@JasmaFusionCuisine for the amount is it same as butter from your recipe ?
Hi 👋 …. I’ve a question … isn’t necessary to spread the better into the molds … is ok just to scoop it ?? … Thanks 😊
I just scoop it and the batter spreads as it bakes but you can spread it in advance if you'd like!
How long is the whole process to do the madeline?
Great video😊 you are very pretty!!
Yummy delicate 😋
Do you think I can use cupcakes tray if I don't have madeleine tray?
sure can!
Why is butter added as a last step? Usually butter is added so much earlier

I used to buy these from Costco but they tasted more and more bland so I stopped, now I can try making them, thank you.
