Momma used to freeze leftover vegetables and when we had enough for a pot full, she get it into a pot with fresh tomatoes. She froze chicken broth in an old ice tray and then stored the cubes in a freezer container. She would throw in a couple cubes. We had corn bread with ours. Miss my Momma so much!

We had friends many years ago from Mississippi and she made succatash when we visited one time. She used lima beans, fresh corn, fresh okra, some green bell pepper, and fresh tomatoes, all from her garden except the beans. She cooked it with homemade chicken broth and served it over hit buttered rice with cornbread on the side. It was delicious! Your recipe is very much like hers. I've made it a few times. Need to do it again. Thanks for sharing this

I love lima beans too. We lived in Louisiana when we were first married. They had dried lime beans that only had a tinge of green, l loved those so much. In all of our travels, I have never found dried green lime beans, with just a tinge of green on them again. I would give anything for a taste of those again. Tammy and Chris, have a wonderful visit with your family. I am addicted to your channel. God Bless

I buy Frozen baby limas. They are the closest to the dried limas that you are describing that I have found. Most of the time the dried ones I find are what we refer to as butter beans. I am in KY. I do not care for the dried butter beans but love the frozen baby limas. I just boil then for 10 or 15 minutes and season with salt, pepper and a little butter unless I turn it into succotash. I then usually add a couple ears of fresh corn I cut from the cob, a couple chopped tomatoes and sometimes about 1/2 an onion and bell pepper. I prefer just the Lima beans, corn and tomatoes. My husbands prefers the onion and peppers in it so if I have fresh bell pepper I usually add it in.

I could eat this everyday! Love it over white rice. That's how my Granny served it to us. She raised 4 boys during the depression and they lived in Georgia. She served all vegetables over rice. It helped to fill her boys stomachs up. Ya'll have a great night. Pam in South Carolina 🤗

Blueberry cobbler and pork, oh my! My college put lima beans in everything, I mean everything, including chicken soup. (Sacrilege!) It's probably the only bean I will not eat because of that. Otherwise, your menu sounds *amazing!!*. I am making pork tenderloin tomorrow night and blueberry cobbler for dessert. Thanks, Tammy. Love ya, to Canada and back.

I have a question? What you are calling lima beans I call Butterbeans. Lima beans to me are the tan/brown beans. I remember picking butter beans with my grandparents and sitting under carport shelling them. Lima beans are dried beans you can get them large size too.

We didn't call it succotash.... just butter beans n corn or peas n corn (purple hull crowders). I loved both! My husband did not like it mixed and my son will only eat corn two wsys: corn pudding and CV orn cakes so I usually mix them on my plate. Sometimes I just open a can of black-eyed peas and corn and heat em up in a saucepan just for me when no one else is here. My husband went to Heaven on June 5. It's just my son and myself now.
