Blessings from Chicago. In the 70s, I worked in different restaurants in Delaware. Every one of them had succotash, mac&cheese, stewed tomatoes and fried fish on Fridays. Up and down Dupont Highway the menus were the same, it was just the recipes that competed. Thank you for this memory. Due to diabetes, I can't eat much corn any more. I use half as much corn and add zuchinni.
Goodness! I haven't made succatash in years! It's so good! My sweet Grandma used to make it when we'd visit them in St. Louis. She used to put pimentos in it. So all our married kiddos can visit with their out laws, I mean in laws on Thanksgiving, we usually do our families’ on the weekend before. You know that mixing beans and grain together and eating at the same time provide a complete protein just like meat does. It sure makes sense to see succotash, baked beans with corn bread, and red beans and rice - so many cultures have wonderful combinations and traditional favorites. I loved seeing how you made this and will surely try your version - looks like it has a lot of flavor. I didn't know about adding sugar to limas but my MIL used to make limas with canned tomatoes and she always added brown sugar - it was delicious!
Succotash is one of those dishes I think more about when the weather starts getting colder. I've not had it like that, but close. You said it reminded you of your grandma and how she could eat a raw onion like a apple. Once I made a post on facebook showing a homemade buttermilk biscuit I had made, with a thick slice of onion on it for my supper. People were going crazy, saying how could I eat that. I told them I was a country girl and I was raised eating them, because my grandma would do the same and thats where I grew to love onions. What would we do without our precious memories.
I still make Succotash bc I grew up on it and Love it with Cornbread! My Grandmaw n Mama would put some stewed tomatoes n onions in it to! It was so good! I make mashed potatoes with it n a piece of meat of whatever I have and it's the best meal. I eat raw onions about ever meal n saute some in my scrambled eggs or cheese omlete for breakfast! Buttermilk n Cornbread with a big chunk of raw onion n black pepper is one of my favorites! Thank you Miss Lori for your Succotash. I absolutely adore succotash; it's got to be one of my (if not THE) most favorite vegetable dishes and has amazing flavor. I have rarely met anyone who hasn't been a fan! Speaking of old videos, there's another channel here on UA-cam called "Glen and Friends" that finds old cookbooks (like the kind your local church used to publish as fundraisers) and tries out recipes for them. Mom and Dad are in their 90's now and still use the wood range although they also have an oil furnace for heat. Lots of good memories centered around that old wood stove.❤

I drive a school bus an the small town where I pick up students was blanketed in big, fluffy snowflakes and the trees looked beautiful. When I dropped the kids off after school one of my first graders hadn't noticed until he was getting off the bus, then he said "Hey, what happened to all of our snow? " I said I guess it just warmed up and it had melted. He then wailed "Oh, no that just makes this another plain old day, not a snow day>" I am sure he spent his whole day at school just planning on his snow play after school.

I haven’t had it for a long time. My grand mother said they ate a baked onion every night before bed in the winter to ward off colds.
Yes Ma’am!!! Succotash is right up there for me with making corn meal mush, or as some call it polenta. Then, like grandma, I let the leftovers cool and roll them up tight in cling film into a log and then slice and fry it in bacon fat or butter then next morning for breakfast. A drizzle of good maple syrup or sorghum as grandpa did, and that was breakfast the next day. Another gone to the wayside recipe is creamed peas or creamed green beans! For me, that is all I need for my supper! Let’s keep the old recipes alive, as well as the skills to cook them. There is a big difference I think between FEEDING your family and just giving them “food” to eat. Well wishings of health and happiness to you both!❤

Your adding sugar reminded me of when I was a correctional officer in Texas. The offenders always cooked the meals. They didn't have access to many spices or seasonings, so their food was always very bland. There was one cook that would put sugar in almost every vegetable. When I first tasted his green beans, I was a little shocked to taste sugar in it. But after a few bites it was pretty good, and the other offenders loved to eat his cooking. It helped me to start experiencing other ways to season food as I had really only used salt, pepper and garlic. I also learned if you listen carefully to others, it can stir up your imagination to a whole new world. I'm 71 years old now and still finding a new world awakening around me. Her biscuits always had a little coal oil flavor😊They didn’t get electricity until 1961 when it came up the holler. How she did that cooking in the heat of the Summer I don’t know. The old cabin had a lean to kitchen, we carried water from the Spring that ran out of the hill for drinking. It was a wonderful time of life for us kids. I love hearing you talk about your grandma❤

We would sauté some red bell peppers and onions after browning the bacon. Then continue to add the lima beans & corn. Made for a very colorful yummy side dish. :) Thanks for sharing.

Succotash has always been my favorite and I loved the way my Mom made it. Since it's only my husband and I, I generally only make it mixed from leftover corn and lima beans. I may treat us for Thanksgiving with making a real mess of succotash 😋

I was born in Greenville Texas (north east). My Mom would make it and I still love it. Dad moved us to northern California for work, but southern dishes are still my favorites. Love your show as well as Tipper's Blind pig and acorn. You both cook what I grew up eating.🤠

My grandkids love Lima beans. I haven’t made succotash in years but will again soon! I always eat fresh chopped onions in my beans with some butter melted into the beans!

I miss my wood cook stove so much. I used to have a huge pot on the back into which I would put the bits left over from cooking all kinds of dishes. Everyone knew to help themselves when they wanted to warm up and didn't want coffee or tea to do so. It never lasted very long before a new mix was started.

My Dad had 1/4 red onion with sandwiches all the time ate like potato chips. Onions are a daily staple around my house.
I wish more people enjoyed Lima beans like the kids and I do. The wife doesn’t care for them, but I do the cookin’ and you eat what dad makes. 😂
I use baby limas. It seems to help with the haters.

That looks delicious ! Although my grandmother and her sisters didn’t make succotash much corn bread pork chops fried potatoes were common meals for us. My mom did fried potatoes a couple times a week

We would sauté some red bell peppers and onions after browning the bacon. Then continue to add the lima beans & corn. Made for a very colorful yummy side dish. :) Thanks for sharing.

Looks wonderful! I have always loved this combo. We've been eating a lot of lima beans this year. I grew Alabama black eye pole Lima beans and they produced quite well.
Never had this, but it looks good enough to eat!

Succotash has always been my favorite and I loved the way my Mom made it. Since it's only my husband and I, I generally only make it mixed from leftover corn and lima beans. I may treat us for Thanksgiving with making a real mess of succotash 😋
I don't like lima beans, so I think I would substitute black-eyed peas....that sounds like it would be really yummy 😋 💜

I was born in Greenville Texas (north east). My Mom would make it and I still love it. Dad moved us to northern California for work, but southern dishes are still my favorites. Love your show as well as Tipper's Blind pig and acorn. You both cook what I grew up eating.🤠

My grandkids love Lima beans. I haven’t made succotash in years but will again soon! I always eat fresh chopped onions in my beans with some butter melted into the beans!

I have not had this in a long time my mom would make it and it was very good thank you for this my mom passed in 81
I miss my wood cook stove so much. I used to have a huge pot on the back into which I would put the bits left over from cooking all kinds of dishes. Everyone knew to help themselves when they wanted to warm up and didn't want coffee or tea to do so. It never lasted very long before a new mix was started.
