Made this the other night, came out excellent. I used a jalepeno and a cherry pepper in lieu of ground cayenne pepper.

I absolutely LOVE limas myself. I'm a displaced northerner, now pretty much a southerner! I've not been served this since I've been down here, but I've had it in restaurants!
For those of you who cook in cast iron, is the upkeep a pain? I'm a bit lazy in the kitchen and am considering cookware. I guess I need to read up on cast iron. Btw, why do you peel the zucchini? Will deffo try this! Mmm!
+lockergr Everbody should have at least one cast iron skillet. I have several. I don't cook in them every day, but when I need one nothing else will do. I made succotash last night before I saw this video. I don't put anything n mine except Lima beans and canned or frozen corn, and it is very good. But I start with dry Lima beans, baby limas preferred, soak them for a day and then boil and simmer them (until beans are soft) in water for about an hour. Frozen Limas would be ok too. I cooked a pound of beans.The Lima beans are very good by themselves, no seasonings except salt and pepper. Then I added my corn and mixed it up. Delicious and cheap. I am sure Sam's version s delicious too, I just grew up eating succotash that is just Lima beans and corn, and I am not from the south.

hey, Sam. i love succotash and especially lima beans! here's another recipe for it, done in a *traditional* way: ua-cam.com/video/amtDSfYcSXI/v-deo.html. note that of all the ingredients discussed in that video, tomatoes are never mentioned. nor do i recall ever having it with tomatoes. i grew up on Long Island, NY, an area replete with Indian lore, (my hometown is North Massapequa) and succotash was a staple in my house.
ETA: upon further surfing, i found a *Down South* okra/tomato-based succotash, and then this one with whole roasted grape tomatoes and chopped green onions! -- ua-cam.com/video/OZduMDav9fA/v-deo.html. one original Indian recipe used bear meat and grease -- fat is flavor, right? fucking delicious!

"Suffren Succotash" was what Sylvester (the cat) always said and with a lisp. Not Yosemite Sam.
The camera guy (doing the close-ups) could and should have demonstrated his accident with out handling the food. And you could and should have just kicked those beans to the side instead of picking them up from the floor. There was enough overhang on that island that you would not have stepped on any of them.
Camera men could maybe be... idk... camera men 🤔

Seems crazy a dish of just mixed veggies has such a specific sounding name. I've sauteed random ingredients a million times and never thought to give the concoction a name.

Fix your camera work and I’d watch this way more. Less shaky and closer is much preferable
cooked this today and i have to say , i think its pretty bland and the corn tastes like cheap salad bar.
