86 yr old Antonia from Sicily makes bucatini pasta with sardines! | Pasta Grannies

  • Antonia shares her version of 'pasta con le sarde' a classic pasta dish from Sicily. And friend Michelangelo entertains us with his singing. He also owns the salted anchovy factory you see at the start - check out www.balistrerigirolamo.it
    It make Antonia's recipe you will need:
    500g bucatini pasta
    1 chopped onion, a glug of olive oil to soften it in
    300g of wild fennel fronds, with stalks; you will need to boil this like you would spinach.
    Or finely slice a fennel bulb and add it with the onion, along with half a teaspoon of ground fennel seeds. Use the fronds from the fennel bulb if you can.
    40g raisons
    1/2 teaspoon powdered saffron
    12 sardines, filleted
    150g fine white breadcrumbs, toasted then stirred with a teaspoon each of sugar and extra virgin olive oil.

    I was born in Sicily and came to America when i was 12 years old. My mom was an excellent cook and i remember when she cooked pasta con Sarde. R. I. P . Mom, and thank you for making this dish for me.

    As evidenced by the mix of sweet and savoury, the herbs and such, this dish is almost medieval. The dried fruit with meat/fish is a give-away, and the saffron. It must be 100s of years old! :)

      Immediately what I thought when she added the raisins...home-gathered herbs...saffron, probably from times of Arab Sicily...this very much recalls the Middle Ages.

    I love the fact that Antonia is speaking in Sicilian, instead of Italian. Sicilian is such a beautiful dialect . By the way, that song at the end is so beautiful. Good lyrics and melody. ❤

      Hello!! Hope you are not offended for the question...
      But Italian dialect is like a country dialect but Sicilian is a regional dialect?? So how do you differentiate the two??
      It is just regional and national languages per country do intrigued me

      @@yachishairclips2250 Sicilian is actually classied as an independent language. An overly simple explanation of the Italian dialects is like this. There were many different languages in the different kingdoms, the Tuscan language was chosen as the standard language for new kingdom of Italy and when it mixed with the different regional languages thats what created the dialects. Sicilian didn't mix and thus is considered its own language, like how Spain still has its distinct local languages (catalan, castillan, aragonese).
      Again, this is a grossly simple explanation but I hope it helped

    My family is from Misilmeri, about 15km away from this lovely Pasta Granny, and Sarde e Finocchio made almost identically to hers was a favourite. A dense mix of Sardines and Fennel fronds used to be sold in squat yellow cans. Sometimes, my grandparents would make a meal with that plus more sardines. Years later, I’d zoom to the side of the roads in California wherever there was cuttable fennel and preserve enough for the year. It’s easy to grow from seed, sold as Florence Fennel or Finocchio. My modification: double fennel and breadcrumbs with anchovy instead of the sardines and a slightly brothier sauce-over the same pasta. If sardines are too strong for other fans, I assure you this substitution, or entirely omitting the fish, still makes a respectable meal, with complex flavors. Thanks PG for a memorable episode.

    Ms. Vicky, this recipe wins best you tube recipe of the week. Antonia is a dear soul & she looks not even close to 86. I like all the ingredients, & I prefer the hollow bucatini vs spaghetti for this dish, plus I really like fresh sardines. I unfortunately am from rural Kentucky which is a landlocked state( I like it here though), & it is impossible to find fresh sardines or even frozen, only canned/jarred which do not come close to fresh, so I'm sorry, but there is no Appalachian recipe close to this, God bless everyone.

      While I realize you said ‘rural’ so no chance of it locally, but when You get closer in to the City, try googling “Asian grocery store near me”, whatever store you visit should have sardines in the frozen food section. 😉Hope that helps you & Bon Appetite!!😊

      @@mjrussell414 I am going to second that. Or heck, just grannies in general. I wish that I had a video of my great grandmother, neither Jewish or Italian, making noodles for her big pot of stewed chicken and noodles. Or my grandmother making pie pastry for an apple pie. One of the last times we were together, I had her walk me though making a pie. She narrated, and I made it. It was so simple I didn’t write anything down. Boy do I feel dumb about that.

      In Australia there's "Monday Morning Cooking Club", started by a group of Australian women of Jewish heritage who collect Jewish recipes from around the world in order to preserve their history. They have published cookbooks, have a website and are also on Facebook and UA-cam.

    These episodes never cease the enthrall and inspire. Sardine and fennel pasta is on my list to make. I love the recipes, but equally important is the sociological context of these women’s lives. For future, I prefer my pasta homemade instead of from the box. Thank you always for this inspiring channel.

    Hi Vicky! Dunno if you're aware of this, but here in São Paulo we have a wonderful set of _festas italianas_. Actually, São Paulo, with 6 million Italians and descendents, is the biggest Italian city in the world (the state of São Paulo has over 15mn)!!
    The celebrations starts in April, with Madonna di Casaluce (est. 1900); in June, San Vito; August, Madonna di Achiropita; September, San Gennaro. They're wonderful. Achiropita is the largest and most famous one. All the cooking is done by women with Italian heritage, the nonas and mamas (in Brazilian terms) and the money goes to charity. And of course, the food is delicious and people from all the country, with or without Italian blood, love it! It's a treasure of our city. So, who knows! Perhaps when covid is gone Pasta Grannies can come visit us down under!! Best, Luan 🇧🇷🇮🇹

    I was wondering about the sugar in the crumb mixture but as I think about it the sugar will bring out the fennel and add to the richness! Brilliant!

    I have accompanied my Sicilian American friend to St Joseph altars and had a specific pasta dish that is made for the festival.
    They purchase a can of cuoco condimento per pasta con sarde and it is readily available at regular grocery stores in northern Illinois.
    I see that it is on line also...of course using the fresh ingredients would be wonderful,but one could get a sense of the unusual combination of flavors with this product.

      Ransom Coates When you say it is 'very sicilian', it means you have never visited. This combination of flavour in savory dishes is not used on the eastern side of the island, surely never seen it where I live. It would be better say it's specific of that particular area of the island though.

    In US would buy frozen sardines from Wholey seafood online. My cat got it started as he got homemade food. Sardines really good for extra teaspoon of "healthy fat". Your hands nails get so improved after deboning, but have to work fast. . .as sardines spoil fast.
