    I'll be damned if these chips don't taste amazing! 😋 I can't wait to see what goodies Justine got for her birthday! And hopefully this issue with the skunk is resolved without the little guy getting hurt and nobody getting sprayed! I can't imagine either of you would want to have to bathe in tomato juice… 😂

    My grandma cooked everything with lard! Unless it called for butter. Lard was preferred for pie crust , biscuits, and frying.

      I have lard as a longer lasting prep and it can be turned into a long lasting emergency candle if not used for food. My mother used it a lot. I tend to use lighter oils like sunflower or olive oil but it is a better option for baking and frying.

      I render lard and tallow every year when we have a hog and a cow processed. Lard makes the best biscuits, tortillas and pie crust.

    I love the beautiful dress you are wearing Justine! FYI, skunks eat chicken eggs 🥚and young chicks🐣, so you may want to have a serious talk with Bob🦨 about staying out of the coop. But they are omnivores and great to have around the cabin, since they also eat bugs, grubs, snakes, mice, etc. They love nuts and berries too, so if you keep him well-fed, he may stay out of the hen house.

    Happy birthday Justine.
    I have heard that a skunk must have it's back feet on the ground to clench the muscles on the scent sack. If you pick him up by the tail he can't spray. I've never tried it. If you get sprayed I accept no responsibility.😊

    I haven't watched these being made yet, but I have made chips slicing a potato, some salt and oil and let er' rip potato chip! I imagine these are similar except the lard. I love to give them a little burn. I love burned chips. If the chip makers sell "only the burnt ones" I would buy boat loads of them.

      Just had that last night. I slice the potatoes about a quarter inch thick on my mandolin and slice onion and fry them in bacon drippings. Soooo good. Had them with some smoked sausage.

    If that skunk sprays near house it's time for a new hat! 🤣🦨 I have a skunk that lives INDOORS. Her name is Lili and she killed a skunk 3 weeks ago and took a direct spray to the face...at 5am in the morning...🥲The good news is it happened to be the resident skunk of the neighborhood because we haven't smelt any skunk since...except in our house! 🤣🤣🤣

    My great great grandparents homesteaded in the Ozarks in Missouri sometime in the 1800s. They were originally from Virginia. My great grandfather was named George Washington Saunders. We have something in common and actually I suspect naming children after the 1st President must have been fairly common!! ❤❤

    I love homemade potato chips they are so good I haven't had any for a long time about the skunk name it Rosebud before I retired I was an animal keeper and we had a skunk non-releasable that didn't have a scent gland we named him Rosebud

    We always had skunks living under my dad's barn. We just called each one "Petunia". Once, we saw a mama skunk taking her babies for a walk, all in single file behind her. They really do bounce along, like Pepe Le Pew.

    Skunks hate the smell of their spray too. That's why they'll do a big performance of stomping around, fluffing up their fur, and pointing their back end at a potential threat, hoping to scare it away. Spraying is the last resort.

    I once was reading a book on historical doctors; one, Ambrose Pare, had been trained to use heavy ointments on burns. One day a man came into his clinic with a badly burned face. An old French grandmother told him to use chopped onions and salt. So Pare applied the ointments to one side of the man's face, the chopped onions and salt to the other half, bandaged the face, and a couple of weeks later, when the bandages came off, Pare found the side treated with onions and salt was almost healed, and the side with the ointments wasn't healed much at all. Might want to look that up.

    The original name was Pomme Frites, which is French for Fried Potatoes. The early French cookbooks list them both as rounds, like you made, and sticks, what we call French Fries. And, while it is true that sliced, fried potatoes do date back pretty much to when the potato migrated to Europe, the paper thin version did originate here in America. Yes, there are a number of stories about who and when, and no one is really sure which one is accurate, the European version was always thicker. FYI - Beignets are still extremely popular in New Orleans - pretty much any coffee shop you go into will automatically bring you Beignets to go with your coffee.

    I have many cats, and feed strays of every kind. I have skunks, possums, raccoons and squirrels. My cats go out, they sniff each other, and go their separate ways. All my wild life get along, very happy and blessed. I love all animals.

    George Crum, also known as "Speck", is credited with inventing the potato chip in 1853 while working as a chef at the Moon Lake Lodge Resort in Saratoga Springs, New York. According to legend, Crum sliced potatoes very thinly and fried them in oil until they were crispy after a customer complained that his French fries were too thick and soggy. The customer was delighted with the crunchy potatoes, and other diners began requesting them as well. Crum's "Saratoga Chips" became a popular treat at the lodge, and he later opened his own restaurant, Crumbs House, where he featured them.

    So much fun!! Always good to see you both thriving and happy!! I loved the birthday presents,the little pitcher,the drinking mug,the little books all so feminine and sweet,like Justine!! Had to laugh about the skunk named Bob🤣🦨! Mild harassment will probably encourage Bob to find another home,they dislike some smells such as ACV,predator urine,hot peppers,lemon,dirty cat litter.     Great episode! My second Great-Grandfather was named George Washington Dills. His son, my great-uncle, was the founder of Dillsboro, NC. His other brothers were named after people in history too. Such fun.

    The name of that fussy customer wasn't recorded, but the name of the chef was George Crum, a Native American. My research says what we call French fries were sold on the streets in Belgium as a snack in the mid-1850s. They get the name French because of the way the potatoes were cut. When potatoes were introduced to Europe from Peru, the explorer who brought them presented a bouquet of potato flowers to his king, saying, "From now on, famine is impossible!" Then in the 1840s in Ireland, the Great Potato Famine occurred, causing a mass exodus of Irish to America.

    A potato in any form is ambrosia to me so homemade crisps must be heavenly 😍. Justine, glad you had a great birthday. I have the very same water jug in emerald green from a town in Provence (South of France) called Salernes. Salernes is a town famous for it's artisanal pottery & they have been making pot, jugs & various tableware there for 7 thousand years !!! Now, they are particuliarly renowned for their glazed clay but they still make jugs etc... Love from the French Pyrenees. xxxx

    According to A Field Guide to the Mammals of America North of Mexico, 1976 edition, you could have either a hooded skunk or a hognose skunk. But both species are more Southwestern. But I have heard of some animals, like opossums, traveling north ward, so maybe your skunk friend you photographed is just looking for a better place to live.
    Do you know that Cinderella is the oldest fairy tale in the world? It has been translated and adapted in every culture in the world. The actual origin of the story is China, from a story called Yeh Sheng. Google origin of Cinderella and you may come to a site called Sur Le Lune; they have the origins of fairy tales.

    My Grandmother cooked with Lard a lot! She also rendered her own Bacon fat, which I do also. I do not have lard, but I recently aquired some Beef Tallow, which is also excellent for frying! I am trying to reduce our intake of seed & soy oils. Not good for people.

    Potatoes may have been thought to be poisonous due to the fact that they are in the nightshade family just like tomatoes, eggplant and peppers. Also, the best thing for burns is the milky sap from a milkweed plant. I burned one of my fingers nearly to the bone and a Native American friend told me about the milkweed. I cut the stem and let the sap cover the burned area. It stung for a few seconds and then all pain was gone. Also as it dried it became like a clear plastic. After a week or so I peeled it off and to my surprise it was healed and there was no scaring. Amazing stuff. I’ve been following you since near the beginning when you were cooking at the other house and doing the skits with the old Frenchman and the river rats who beat Ron up. I was involved in Living History for many years but I’m now in my mid seventies and,sadly, unable to get around well so can’t set up camp any longer. I do live vicariously through you and love it. Thank You and keep doing your thing as long as you can.

    I'm less than a minute in but I can't stop laughing at you and Mish Mash! I have 6 rescue cats and 2 especially who like to be annoying, get on the roof and start crying while you rush to be the rescue services and "rescue" then. Meanwhile they are PERFECTLY capable of getting themselves off the roof especially when hungry. But I have done just what you did with Mish Mash. My chocolate brown cat called Claude came to me when he was 3 days old as a foster with his mum. As she lost her milk early to trauma, she'd been through a lot, I had to bottle feed Claude frequently and he developed a "favourite place" to see the world from and that involves jumping on my back from a height if I'm bent down in the garden. He's very sweet, and I am going to have to conceed to his demands for pats and finish here. Thank you Justine for making me laugh.

    Thank you for another great video! I remember my mother frying up a batch of "potato chips". No matter how she tried, she just couldn't fill a bowl with potato chips (we kids ate them fast enough that Mom couldn't fry them fast enough😃).

    I have never met a potato I didn't like, and somehow there is always a new way to cook or fry them! Love these videos, Ron and Justine; I look forward to them every week! So cool that you guys got video of your beautiful new friend, perhaps he is coming up with the other interesting little critters coming up from the far southern areas - I heard that armadillos are even being seen in NC du to the slightly warmer winters. Also, could Ron touch more on the subject of the war and George Washington and things being covered up at the time of the civil war (@31:30)?

    What do you do with the lard when you're done? That is my biggest problem with frying anything. The oil/lard mess afterwards.
