Just curious my friend - Jamie's first TV programme was The Naked Chef in 1999, 25 years ago. If you're 60 now, you would have been 35 in 1999, so how could you have been watching him when you were a child? He's 48, you're 12 years older than him!

I bet the baby mozzarella really does its creamy number with this contrast, flavour and then the texture one with the crostini.. Perfect. Nice and simple for such vivid contrast.

I have been watching Jamie for decades now and he always says "chilis" without identifying what variety they are. He does know that there are hundreds of types of chilis just as there for potatoes or tomatoes or lettuce, etc.
Here he’s just using them for heat so use whatever suits you as you would with an arrabbiata or whatever. It’s your choice as the chef.
If he was actually wanting sweet or fruity or nutty or mild or hot etc then I’m sure he’d have specified a type.
I’ve noticed him specifying the type of potatoes and lettuce before certainly

He seems to use those you can buy in Tesco, Asda, Coop, etc! Those mixed, in a pack
The ones he normally uses look like what my local grocery sells as red chilies they come in a bag not actually sure of variety but they are pretty good
