As a mom with 2 small kids, that feels like real life coming home from work...homework time...cleaning up...entertaining children...trying not to burn/undercook/properly coat the food...
I love how he read the comments and saw that a lot of people were complaining that his methods took too long and fast food has to be fast. Now he is showing that you can make better food in the same amount of time.

but still, taking into account shopping, cleanup, and the fact that not everybody has as organized a kitchen as joshua does, it's debatable. it was a fun video for sure, but it doesn't exactly prove anything about the actual timeframe someone could make this dish in. hell, just having a neat, big kitchen where you know exactly where everything is cuts SO much time down when you're cooking, and josh already knew exactly what he was doing, even if he didn't know the recipe 100% and forgot some things. i'd argue that ordering takeout is still probably faster than the average person being able to make orange chicken from scratch.
Fun video. Doesn't include time doing the dishes. I do dishes for 20-30min every day and it's the worst part of my day. The best part of takeout isn't the food quality or saving time cooking (which I enjoy), it's no dishes.
He still goes extra in making everything from scratch, when people have trouble with assembling and cooking the meat. His cooking videos are still not true basic starters, they don't encourage cheating when the restaurant industry clearly does. I could use the chicken recipe and add Panda Express Orange Sauce....or buy pre-made Orange Chicken and add the same sauce. The latter's a good start if you've never fried anything and need quick practice.
I like it! I think this go was more of a "but stressful", though I think if there are enough culinary shortcuts and ways to creatively multitask presented, this can be a fantastic series. Great job on episode 1 JW crew!
I love how he was talking faster, I could feel his anxiety. Then when he said "I feel like I'm forgetting something" while coating the chicken, I literally can't stop laughing! Then you lock the door on the guy, oh my gosh, I sounded like I was watching a sitcom. Thanks for the laughs, and proving the dinner can get done faster than take out.
Absolutely love the fact that you came home with the wrong order. It happens more times than you think, especially when you are really in the mood for that specific taste. I always prefer homemade over take out and you just proved over and above why more people should cook at home. Cheaper, better, faster and it's right the first time. Love ya Josh. Thanks.
I loved this because as much as his other videos are edited to show the perfect takes and therefore really pleasant to watch, I could relate to so many parts of this video as someone who cooks at home regularly; like how he started running out of counter space, how the oil didn't heat initially, and missing the egg dredge. Thanks for giving us a window into your struggles and learnings too!
Alright, "But Faster" may be a bit less educational but still very entertaining so I like it! I really enjoy that Joshua didn't train to make make the orange chicken like 5 times before to optimize everything and that it's a genuine try, so yeah I'd love to see more "But Faster" episodes

I like this new series. One small thing I'd like to see is even if you get the restruant food first and back home before you finish making it, to still make it. You could be like, sure it took 5 or 10 minutes longer at home to cook, but it's still better even tho we technically lost.
I really like how you prove it can be made at home faster, cheaper, and fresh. Having worked in Foodservice for 24 years… and being an absolute stick in the mud when, it comes to authenticity - I feel that authenticity is far more critical than speed. Going to head to the Asian market to pick up some missing key items we can’t find back home, before heading home to try out your recipes. We used to order from Mr Nings, but they have since closed, and there’s been no replacement since.
Lol this was actually great, was super refreshing seeing Josh caught off guard. The fact it's less manicured and edited I think helps people learn how to move around the kitchen with efficiency like you said. Very refreshing series and entertaining af, can't wait to see more!
Theres something fun about seeing Josh get stressed out over time and think of workarounds like the pressure cooker rice method. I hope theres more episodes of this series
It's pretty interesting to see him discovering how good and versatile something like the pressure cooker is for cooking food faster while being almost or just as good as the longer "better" way, it's kinda like we're learning along with him
Love your channel, Josh! I'm 57 years old and love to cook, and I've been having a blast making your recipes over the last month. You've convinced me that I NEED a stand mixer. Not everything has turned out like yours. My Cashew Chicken doesn't have the color yours does, but then again, I can't find black vinegar or dark soy sauce locally, so maybe that's it. I'm making this orange chicken for my son and his girlfriend tomorrow night. We'll see how it goes.
Been watching for years, I like the new series. Brings a bit of a more realistic chaotic energy to the mix. Seems to be a space of growth for you and it's always good to see those teaching, still pushing themselves. Nice to see the crew a bit more too.

Ethan beat you to this one by a couple of weeks. I kinda prefer his version of this idea because it is unedited, which makes it a little easier to follow. The shorter video time does make these more bingeable though (once you have more than 1)
Seems errily similar to what Ethan Chlebowski does but with fast food. Love seeing different varities, looking forward to this series. Maybe we can have the ENTIRE cooking proccess filmed like his or at least these videos in a bit longer context? Tips, cheats, ways to get things get quicker, incorporating cleaning, etc.
Seems almost like a "change my homework a bit so the teacher doesn't notice" but it's worse because you learn significantly less than in Ethans video. Feels much more of just entertainment than teaching anyone how to cook

I like the concept, would love to see more! Personally, I'd benefit more if the show focused on techniques to be quicker and efficient. We all understand that papa will be fast, but going over the skills to practice and get up to speed would be huge. The whole racing thing is fun but feels like we get the same effect if Josh just tries to keep everything under 30-40 minutes vs a stopwatch, with the taste tests at the end. He can stop the timer to go over details of how/why he's doing something. I'd like to see more of him talking about how he would prepare and lay out his kitchen beforehand to go faster. Setting up would probably still be faster than me putting things away, getting dressed, and finding what I want to order tbh. Time saving/flavor boosting tips like preparing the chicken for 5-10 minutes the night before would also be helpful.
It definitely felt like "how fast can /I/ make this". And he's a trained chef. 😂😅 sorry Josh but I have no hope nor the desire to run around like Speedy Gonzalez Weissman in the kitchen here, especially with sharp knives and splattering oils. Doesn't make the cooking process very appealing when it's adding another type of stress.
Yes, prepping ahead where you can is key. Like if i know I'm making saucy dishes for more than just me, I prep the sauces the day before. Especially useful for sandwich sauces or noodle sauces. I make stock 3 or 4 times a year and jar it, so if I'm planning something that will need stock, I pull one out of the freezer the day before to let it thaw. I pull beef out the day before and salt brine it, especially steaks and roasts. If I'm braising, I might only salt the meat 10 to 15 minutes ahead. I make seasoning blends ahead to cut down on reaching for individual spices while cooking. Definitely useful for Indian and Mexican dishes. And definitely, if you're deep frying or boiling, take those big pots of liquid started while you prep veggies or start carbohydrates because they take forever to get up to temp.
Ethan Chlebowski (here on UA-cam) just did the type of video you described, but to make a Chick-fil-A sandwich. He didn't rush the process and still had time to explain his steps/recipe.
the problem is, if he did that people would still complain. A lot and I mean a lot of his recipes call for preparing things ahead of time and all people could do was complain about how they "don't have enough time to do smth like that" Imagine wanting to be a home cook while also juggling a busy life but not wanting to put in the minimum possible effort needed to achieve that. I've noticed that those same set of people always lack a certain amount of common sense. Like how they thought buying bulk ingredients for "just a sandwich is stupid" when you can literally use all the leftovers for a million other recipes across the week.
Ah yes, my daily dose of anxiety that someone else has to live through and I don't have to live through and that makes my anxiety chill out like the guy taking take out. Peak content, nice job.

I've been following a lot of your recipes recently and what I've found is that for the first 1 or 2 times you make the food as an at home chef its easier to do everything step by step and then once your comfortable with the recipe it's so much easier to do it all at once. If you start doing multiple things at the same time for a brand new recipe it just stresses you out and you tend to let things burn.
I love this series so far. One of my biggest issues in the kitchen is timing. Sometimes its hard to figure out what I can do at the same to to save time. I know you'll have great tips! Thanks!
Josh having restaurant line flashbacks this whole episode. I think adding in a small wrap up of advice (since doing it in the moment is going to be hard) on ways to save time would be a good addition here, similar to how you note the price of ingredients as they come up in But Cheaper.

Great idea, Ethan Chlebowski just started a similar series to this, love them both, some personal feedback: Your style of cutting a lot and going fast while it is nice for time saving on content consumption, it takes the informative approach you have done in a lot of your other series w/ a sprinkle of memedom and fun, to a new category where this entire video felt super jumpy and disconnected. With some duration / editing tuning I think this will be a really fun series, keep up the great work!

One thing that would be super cool is a “how-to” or “fundamentals” series where you review basic skills in the kitchen, such as “holding a knife and chopping” and stuff like that (maybe this is exclusive to UA-cam Short?). Your earlier videos did such a great job of that. At the end of this video, you emphasize the importance of technique, which I think could deserve its own (micro) series. Thanks!
I love this idea for a series! Agree w others that the editing was a bit too choppy and the "rushed" feel was unnecessary in the editing, as it's already built into the content itself. But lots of fun and I hope there's more of these!
Part of what makes Ethan's version of this so good is that the editing is so minimal. It's basically one long cut but he speeds up some parts when he's just futzing around looking for stuff. This is kind of a poor co opt on the concept

Definitely enjoyed! As a father with a full time job and the one who cooks all the meals, I often use your videos as a guide for dinner, however they are usually very time consuming or need a lot of ingredients that I can’t find at the local grocery store. Would love a Chipotle but faster

I really like the concept of this series, and obviously since it's the first episode you're just testing the waters. It's good as is, but I feel as if it could be the perfect way to test out "speed cooking" hacks. Maybe before you start cooking you could give a rundown of the "hacks" you'll be using and what they're supposed to accomplish in theory, so that we can better see if it works out by the end of it. Overall a fun series, want to see more of it.
While a similar concept, it’s a different feel than Ethan Chlebowski’s series. While this one is fast paced entertainment, Ethan’s is more instructional and realistic. Both are super good! Can’t wait to see more :D

I like this new series. I'm long overdue for college, but I'm on my way this year. I'm taking culinary arts and it would be really good training to learn how to minimize time. This would also help busy people eat better since business shouldn't be an obstacle for good meals.

I love this new series. Because I live in a rural area, to get takeout is at least 1 hour round trip for us. In the summer, sometimes we get the takeout and go to a beach and have a picnic, because then the food will be hot.
That's the thing I somewhat hated living out in the country, if I wanted a meal from a specific place, I'd have to be willing to either eat in the car, eat it cold at home, or just cook something myself which I prefer to do
You should call this series “Maximal Stress” instead of “Faster”. Until the taste test on the end, I was sure that I would avoid the hell that is making orange chicken at home. BTW, you should include prep and cleanup in your time comparisons.
Yup, and technically also grocery shopping. So in the end it takes way longer to make it yourself and you have to do more annoying work too (aka cleaning).

@@wildwanderer6025 Well if we need to go that far, then we need to include the time of ordering the food, time to make the money to pay for the food, time to fill up on gas (grocery store is much closer to people than a good asian restaurant many times) and more.
but the prep was in the video, he Did everything on screen, the cleanup part should not be considered in this Challenge simply because restaurants does not have one person doing the cooking the prep and the cleaning, is a business with more than one person, and then if we have to be this specific since the restaurant messed up the order he made the food in half of the time he got his food right (If we consider that the restaurant they went was more or less 10 min as they said in the video, it took around 40 minutes to get the proper food)

I love it, I watch another UA-camr who does this and was always like. I wish Josh did. If you count delivery it's even longer for food to arrive. This is hands down faster.
I’m a home cook and so of course I prefer home-cooked food (especially mine 😉) over takeout any day, but I don’t care what anyone says, takeout is always faster. He didn’t show the dishwashing part here, which would have taken another 15 minutes considering how many pots and pans he used. Plus, if he made the veg as planned and no mistakes etc, all in all, this would’ve taken an hour at least.
You can always do the dishes afterward. If we're going for just pure speed, takeout is usually slower where I live. Throw in delivery, my god that takes an hour minimum. Almost every dinner meal I make is done in less than 45 min which is on par with takeout speed. The thought that in this video they got the food back to their place in less than 30 min is insane to me. All the restaurants around me tell me to wait 30 min before the foods done. Add I payment and driving back, it usually take about an hour from calling to eating.
Ah yes but you are forgetting the golden rule. IF YOU COOK YOU DONT CLEAN. Also just do extra and meal prep a bit boom instant mean for next day in under 1 minute. Home cooking is faster, cheaper, healtiher and better you just need to not make a big deal out of it and stay creative.
@@naumarcheriscool I am obsessed with clearing everything as I go! I always end up with a more or less clean kitchen before the food is done, and it helps me make the food faster and feel more in control. It really doesn´t take long to toss some things in the dishwasher and cleaning the pots and pans, cutting boards and knives under the sink while the food is simmering/resting. Easy! My imaginary wife is always very happy with me.

The first video of your's I've watched was "Cinnabon rolls" But Better, followed ever since. In Egypt we put the rice in a nice water bath for at least 30min, like that the rice water can even be successfully used for some hair care. Your kitchen equipment is just a dream come true!
A little bit less water in the pressure cooker as you lose less to atmosphere and less is booked away by heat over time. Hope that helps. Pressure cooked anything that's in marinade will 100% come out better.
I'd be interested in seeing some videos in a "But Faster" series. Show us how to make quick meals at home faster than you could by driving out to a restaurant, ordering and returning.
Yess w less chopping too. And less ingredients and cooking time, preferably w more pre made frozen food for extra efficiency, also a delivery right to your mouth would be good

Fun new series :), this is a more high energy/high pase version of what Ethan (I’m not even going to try and spell his last name because I will fail) has been doing recently though he doesn’t care all that much about actually beating the pickup/delivery time and just cooks at a normal pace instead :)
I'm glad I'm not the only one who thought about Ethan's series. He should be pretty happy that he's setting a trend, even though as you say, Josh does it a little differently.

All around hilarious. While American, my family came from the Caribbean where rice is cooked daily and not in a rice cooker. I vouch for the Instapot ability to make literally PERFECT white rice, especially jasmine rice (but not rice and beans or any kind of flavored rice). Joshua also could have saved time and added quality if it had just marinated the chicken in the seasonings AND egg mixture at the same time. And could have gotten the oil up to temp faster if her removed the thermometer and used the cast iron lid. Jack that heat to max and place a lid on it. Wait 3-5 mins and then test the temp. Heating oil up without a lib seems like a wasteful action if the lid isn't on. Same with boiling water. A lid, especially a cast iron lid is your friend. Use it.
I like the new series, HOWEVER, I would love to see you start with everything away and get it all out in the same amount of time. Don’t measure anything before hand. Get the instant pot from where ever you keep it. THEN I’ll be impressed. 30% of my cooking time is always measuring all the ingredients. You can’t have them pre measured in bowls. That’s cheating.

I loved this because as much as his other videos are edited to show the perfect takes and therefore really pleasant to watch, I could relate to so many parts of this video as someone who cooks at home regularly; like how he started running out of counter space, how the oil didn't heat initially, and missing the egg dredge. I like this new series. One small thing I'd like to see is even if you get the restruant food first and back home before you finish making it, to still make it. You could be like, sure it took 5 or 10 minutes longer at home to cook, but it's still better even tho we technically lost.

I really like how you prove it can be made at home faster, cheaper, and fresh. Having worked in Foodservice for 24 years… and being an absolute stick in the mud when, it comes to authenticity - I feel that authenticity is far more critical than speed.
Going to head to the Asian market to pick up some missing key items we can’t find back home, before heading home to try out your recipes. We used to order from Mr Nings, but they have since closed, and there’s been no replacement since.
Lol this was actually great, was super refreshing seeing Josh caught off guard. The fact it's less manicured and edited I think helps people learn how to move around the kitchen with efficiency like you said. Very refreshing series and entertaining af, can't wait to see more!

Love your channel, Josh! I'm 57 years old and love to cook, and I've been having a blast making your recipes over the last month. You've convinced me that I NEED a stand mixer. Not everything has turned out like yours. My Cashew Chicken doesn't have the color yours does, but then again, I can't find black vinegar or dark soy sauce locally, so maybe that's it. Maybe we can have the ENTIRE cooking proccess filmed like his or at least these videos in a bit longer context? Tips, cheats, ways to get things get quicker, incorporating cleaning, etc.

I like the concept, would love to see more! Personally, I'd benefit more if the show focused on techniques to be quicker and efficient. We all understand that papa will be fast, but going over the skills to practice and get up to speed would be huge.
The whole racing thing is fun but feels like we get the same effect if Josh just tries to keep everything under 30-40 minutes vs a stopwatch, with the taste tests at the end. He can stop the timer to go over details of how/why he's doing something. I'd like to see more of him talking about how he would prepare and lay out his kitchen beforehand to go faster. Setting up would probably still be faster than me putting things away, getting dressed, and finding what I want to order tbh. Time saving/flavor boosting tips like preparing the chicken for 5-10 minutes the night before would also be helpful.
It definitely felt like "how fast can /I/ make this". And he's a trained chef. 😂😅 sorry Josh but I have no hope nor the desire to run around like Speedy Gonzalez Weissman in the kitchen here, especially with sharp knives and splattering oils. Doesn't make the cooking process very appealing when it's adding another type of stress.

Like if i know I'm making saucy dishes for more than just me, I prep the sauces the day before. Especially useful for sandwich sauces or noodle sauces.
I make stock 3 or 4 times a year and jar it, so if I'm planning something that will need stock, I pull one out of the freezer the day before to let it thaw.
I pull beef out the day before and salt brine it, especially steaks and roasts. If I'm braising, I might only salt the meat 10 to 15 minutes ahead.
I make seasoning blends ahead to cut down on reaching for individual spices while cooking. Definitely useful for Indian and Mexican dishes.
And definitely, if you're deep frying or boiling, take those big pots of liquid started while you prep veggies or start carbohydrates because they take forever to get up to temp.

Ethan Chlebowski (here on UA-cam) just did the type of video you described, but to make a Chick-fil-A sandwich. He didn't rush the process and still had time to explain his steps/recipe.
the problem is, if he did that people would still complain. A lot and I mean a lot of his recipes call for preparing things ahead of time and all people could do was complain about how they "don't have enough time to do smth like that"
Imagine wanting to be a home cook while also juggling a busy life but not wanting to put in the minimum possible effort needed to achieve that.
I've noticed that those same set of people always lack a certain amount of common sense. Like how they thought buying bulk ingredients for "just a sandwich is stupid" when you can literally use all the leftovers for a million other recipes across the week.
Ah yes, my daily dose of anxiety that someone else has to live through and I don't have to live through and that makes my anxiety chill out like the guy taking take out.

I've been following a lot of your recipes recently and what I've found is that for the first 1 or 2 times you make the food as an at home chef its easier to do everything step by step and then once your comfortable with the recipe it's so much easier to do it all at once. If you start doing multiple things at the same time for a brand new recipe it just stresses you out and you tend to let things burn.
I love this series so far. One of my biggest issues in the kitchen is timing. Sometimes its hard to figure out what I can do at the same to to save time. I know you'll have great tips! Thanks!
Josh having restaurant line flashbacks this whole episode. I think adding in a small wrap up of advice (since doing it in the moment is going to be hard) on ways to save time would be a good addition here, similar to how you note the price of ingredients as they come up in But Cheaper.

One thing that would be super cool is a “how-to” or “fundamentals” series where you review basic skills in the kitchen, such as “holding a knife and chopping” and stuff like that (maybe this is exclusive to UA-cam Short?). Part of what makes Ethan's version of this so good is that the editing is so minimal. It's basically one long cut but he speeds up some parts when he's just futzing around looking for stuff. This is kind of a poor co opt on the concept

I really like the concept of this series, and obviously since it's the first episode you're just testing the waters.
It's good as is, but I feel as if it could be the perfect way to test out "speed cooking" hacks. Maybe before you start cooking you could give a rundown of the "hacks" you'll be using and what they're supposed to accomplish in theory, so that we can better see if it works out by the end of it.

While a similar concept, it’s a different feel than Ethan Chlebowski’s series. While this one is fast paced entertainment, Ethan’s is more instructional and realistic. Both are super good! Can’t wait to see more :D

I like this new series. I'm long overdue for college, but I'm on my way this year. I'm taking culinary arts and it would be really good training to learn how to minimize time. This would also help busy people eat better since business shouldn't be an obstacle for good meals.
I really like this series. I agree with other comments I saw about acutally making the recipe even though you'd technically loose. I love this new series. Because I live in a rural area, to get takeout is at least 1 hour round trip for us. In the summer, sometimes we get the takeout and go to a beach and have a picnic, because then the food will be hot.
That's the thing I somewhat hated living out in the country, if I wanted a meal from a specific place, I'd have to be willing to either eat in the car, eat it cold at home, or just cook something myself which I prefer to do

You should call this series “Maximal Stress” instead of “Faster”. Until the taste test on the end, I was sure that I would avoid the hell that is making orange chicken at home. BTW, you should include prep and cleanup in your time comparisons.
Yup, and technically also grocery shopping. So in the end it takes way longer to make it yourself and you have to do more annoying work too (aka cleaning).

@@wildwanderer6025 Well if we need to go that far, then we need to include the time of ordering the food, time to make the money to pay for the food, time to fill up on gas (grocery store is much closer to people than a good asian restaurant many times) and more.
but the prep was in the video, he Did everything on screen, the cleanup part should not be considered in this Challenge simply because restaurants does not have one person doing the cooking the prep and the cleaning, is a business with more than one person, and then if we have to be this specific since the restaurant messed up the order he made the food in half of the time he got his food right (If we consider that the restaurant they went was more or less 10 min as they said in the video, it took around 40 minutes to get the proper food)

I love it, I watch another UA-camr who does this and was always like. I wish Josh did. If you count delivery it's even longer for food to arrive. This is hands down faster.
I’m a home cook and so of course I prefer home-cooked food (especially mine 😉) over takeout any day, but I don’t care what anyone says, takeout is always faster. He didn’t show the dishwashing part here, which would have taken another 15 minutes considering how many pots and pans he used. Plus, if he made the veg as planned and no mistakes etc, all in all, this would’ve taken an hour at least.
You can always do the dishes afterward. If we're going for just pure speed, takeout is usually slower where I live. Throw in delivery, my god that takes an hour minimum.
Almost every dinner meal I make is done in less than 45 min which is on par with takeout speed.
The thought that in this video they got the food back to their place in less than 30 min is insane to me. All the restaurants around me tell me to wait 30 min before the foods done. Add I payment and driving back, it usually take about an hour from calling to eating.
Ah yes but you are forgetting the golden rule. IF YOU COOK YOU DONT CLEAN.
Also just do extra and meal prep a bit boom instant mean for next day in under 1 minute. Home cooking is faster, cheaper, healtiher and better you just need to not make a big deal out of it and stay creative.

I always end up with a more or less clean kitchen before the food is done, and it helps me make the food faster and feel more in control. It really doesn´t take long to toss some things in the dishwasher and cleaning the pots and pans, cutting boards and knives under the sink while the food is simmering/resting. Easy! My imaginary wife is always very happy with me.

In Egypt we put the rice in a nice water bath for at least 30min, like that the rice water can even be successfully used for some hair care. Your kitchen equipment is just a dream come true!

All around hilarious. While American, my family came from the Caribbean where rice is cooked daily and not in a rice cooker. I vouch for the Instapot ability to make literally PERFECT white rice, especially jasmine rice (but not rice and beans or any kind of flavored rice). Joshua also could have saved time and added quality if it had just marinated the chicken in the seasonings AND egg mixture at the same time. And could have gotten the oil up to temp faster if her removed the thermometer and used the cast iron lid. Jack that heat to max and place a lid on it. Wait 3-5 mins and then test the temp. Heating oil up without a lib seems like a wasteful action if the lid isn't on. Same with boiling water. A lid, especially a cast iron lid is your friend. Use it.
I like the new series, HOWEVER, I would love to see you start with everything away and get it all out in the same amount of time. Don’t measure anything before hand. Get the instant pot from where ever you keep it. THEN I’ll be impressed. 30% of my cooking time is always measuring all the ingredients. You can’t have them pre measured in bowls. That’s cheating.
