While I’m generally familiar with these qualities, it was cool to see the interview and hear about some of the specific things like the drying process creating a difference
In my experience (Here in Mexico with generic tanned hides) Cowhide is used as the standard for motorcycle jackets, cow tends to be softer and steer, considerably heavier and stiffer. It's personally my favorite type of leather from the country production, almost at CXL resistance. Horsehide can sometimes be seen but the ones i have tried here are rather cheap and not as shiny. The best way to describe them would be pretty much similar to calfskin, around 2.5oz thick and soft, considerably more resistant than lambskin with a pretty tight grain. Lambskin is not worth it here in Mexico in my opinion. The leather is so softly treated, so thin (2oz or less) and so spongy that you can tear it apart barehands. Unless you want a jacket that will be easily damaged or you treat them very carefully, i don't advice it at all. Bear in mind the lamb Schott uses is way better, veg tanned and thicker, firmer. Goatskin i have seen used, and i would prefer it a thousand times above any lambskin. While being extremely thin, it holds a far tighter grain and a much denser, firmer structure than the lamb. And finally, what i consider the best price - value leather in the mexican production: Calfskin. Calf, while being thin, less than 2.5oz (Pretty much at around the thickness of the Mission) is very tightly packed (Not as much as horsehide though) and very shiny overall, more than pretty much any other type of leather from the market. It can be almost as soft as lambskin but also as firm and stiff as horsehide far thicker. That last one doesn't break in as easily but it's a monster and will resist anything since the grain is so tight and strong. Finally, there are a couple of options that i am interested in trying out, even though the cost of a jacket made out of them will jump up a lot with those materials: Veg tanned goatskin from Lefarc and some waxed cowhides from Lefarc as well that i guess would be pretty much an equivalent to CXL. That last one i wanna try out

The mistake I made was to tailor it here in the USA for a more slim silhouette as Mexican design jackets tend to be bulky looking , I mentioned the mistake because now it's too small since I gained 10 pounds. I tend to go to Leon every 10 years to stack up on leather products but agree leather quality has been reduced even mixed with FAUX leather. It's still a great place for accessories like exotic skin wallets, belts , luggage/bags but not the leather shoes(!ugly looking) and men's jackets. As for women it's paradise since they mostly are fast fashion and even if leather is low quality still is better than faux leather from ZARA at half the price and for some reason the fit for women is much better looking. Men's shoes are ugly I don't understand if a foreigner company comes with their own design and just wants the manufacturing they come out good looking( Luchase boots, jay Butler and Thursday boots)but that same artisan can't copy it and sell it in boutique it

I bought a aero leather jacket in the heaviest weight horsehide available. It is taking some breaking in but I've never seen a better jacket for protection. £750 and built like a tank with a belt. Aero Leathers in Scotland are the best bike jackets I've seen and I've had top Lewis leathers in the 1980s and I looked at Simmonds Bilt. They were good too but Aero Leathers stitching and it's pitch and quality, antique brass zips and tartan wool lining is bespoke and made to measure. I'm glad I never bought schott even if they're good I prefer aero.

The bespoke choice of top tartan lining, the great construction and pitch of the stitching makes the difference, it's important and it's explained on aero leathers web site. A true old school biker jacket which is me rather than a look alike worn by heavy metal fans trying to look the part. I had a Pakistani made secondhand jacket in cow hide I had for years but the pockets, lining is nylon and foam and that fell apart but the zips and leather is really good especially for the price. If Pakistani makers sort out their lining and style they could do really well especially at the price of £200 as it's not easy to find great quality in cheaper jackets.
I'm a schott jacket freak the only other leather jacket company I love too is eastman leather jackets, back in the 1960s I remember my grandpa used to wear my father's ww2 b3 jacket and other times he used to wear his ww1 jacket ( that jacket was not leather ) in the winter time it was very cold in south Texas I remember visiting my grandpa's family in a little town outside of del Rio Texas ( we used to live outside of Laredo) the older and more used those jackets were the better they looked.
I just got a Cape buffalo Indy style jacket. Solid,heavy three season jacket. It is surprisingly supple because of tanning and tumble dry process. Its color and smoothness is luxurious.
What is crazy is with the Horween "Heavy weight" jacket, roughly 50% of the weight is all the magical oils etc. they jam into the leather. While of course the quality of the leather is undoubtedly excellent, half of the perceived weight isn't even leather. And yes, in this case it is an indication of quality, Chromexcel isn't for everyone, and other coats of similar weight would likely be made up of more actual leather, material wise. If you don't know leather, it's almost impossible to "judge what even is quality. Go from, "This (insert leather item) is the straight Bee's knees!" to "I'm ashamed to wear this outdoors now." trying to guess.

I think Hide is where the skin is thick that it got skived down to make different kind of grades and desired thickness, while skin is where the entire animal skin is used because it is thin

Can leather jackets be altered? Problem is my body structure. I finding blazers and shirts are a nightmare for me. I have to get past my shoulders and arms and then get the waist tapered... I'm at the point where lifting is causing me to get custom tailored jackets.
@Stridewise yeah I need a rough tough minimal cafe racer style jacket which I've found online made from the highest quality heavy cow hide. The 2 I found well priced was the Oxford route 73 2.0 leather jacket and the richa detroit leather jacket
Update: I bought the route 73 the torso front is good the back and arms look terrible, I'll probably settle for a regular leather jacket not a motorbike one. But durability is a concern for me

For reference I'm 5,6 slim mascular build I like short jackets for riding my bike the the jacket doesn't bunch when sitting. Chest 37 inches - not sure if a 36 is short enough in length for me and a 34 being too small

I have a calfskin jacket. It's matte compared to goat but patinas better. Lambskin is girly. Refuse steerhide since it's a castrated cattle. Horsehide is hyper masculine but still elegant. Buffalo is TOO rugged. Good if you're deep into workwear Americana. Deer reminds me of goat but it's much rarer
Leather jackets are a luxury item. A lot of people cannot afford such a luxury. For the most part, people buy whatever they see at the mall or in a department store. They aren't going to be getting a single piece of leather on the back, horsehide, shearling, etc. Most people will buy from Wilson's.

People need to understand that cowhide can be finished or unfinished and that will affect the qualities a ton

I love my Aero jacket. I'd buy another, but the break-in is insane. It will last a lifetime though.

They could be altered, problem is that you need sewing machine for leather and your local altercation place may not have it.
So basically full grain/top grain cow hide is the best
Depends what you're after! Some guys prefer the heavier feel of horsehide but yeah there's a reason cow is the go to
