I made these for my VERY picky 2 yr old, he was very hesitant at first. After 30 minutes of patience I decide to pour some syrup on them and he came running to eat it. Made him think it was regular pancakes. He loves them, I put a tiny bit of syrup though so he can really taste them. This is my new go to meal/snack. 😊 I also did a few using sweet potatoes.

Just made these. Definitely made some mistakes, but they turned out pretty well. Tips for Future Me for when I make these again: • LOW heat for about a minute to a minute thirty (right after oil) on each side; minute thirty to two minutes if doing every other with oil for the second if using gas stove. (Check to see if it’s still a bit raw.) 5 minutes WILL burn them. (You can try 5 minutes on electric stove, but not the gas one.) • If using the balls of mozzarella, break it up so it will melt better. • They do not need to be perfectly mashed. They are being cooked anyways. • Do NOT make these so big. If using the balls of mozzarella, break in half and use half in one. And finally: • Pair this with something. Don’t eat it plain. Is it nice? Yes. Can it also be a bit boring? Also yes. If you don’t have red sauce, then a cheesy Sunchip on top makes it taste great~ 👍🏻 (I am not kidding. It’s great. Potato on potato; cheese on cheese. Perfection)
@@beafraid5467 First, I didn’t burn anything. It wasn’t fully cooked in the middle even after cooking on both sides, but if I kept cooking it, it would have run the risk of burning. That’s why I say lower the temp on the stove top I used. All stove tops are different so this may not apply. Second, I am a perfectionist. When I made these, I wanted ZERO lumps. All smooth. The point for myself was that I don’t need to spend that long getting ALL the lumps especially the itty bitty ones. I was trying to get my perfect idea of mashed potatoes, not a potato pancake. And all this is my notes for next time I want to try to experiment. These will be edited or completely thrown out as I try them to see what works and what doesn’t.

I just made this with a package of instant mashed potato (because that's what I had), and it was really good. I used sesame oil to fry it in. Now I smell like Sesame oil. Haha!

made these today but only had russet potatoes on hand, a waxy potato would have been better as it has more moisture and as an experiment, I used a hard vegan cheese in the middle instead of my smoky vegan cheddar, not melty like mozza or cheddar; so, next time going to use waxy potatoes and use a cheese that will melt easily BUT they were still delicious (I did add a bit of onion powder to the potatoes) - thanks !!

Tried this recipe and it was great 👍 My potatoes were dry so I didn't add much flour. What kind of potatoes did you use? I added a little bit of mayonnaise and chives and I think it gives it a great, creamy taste. I think oil makes the pancake crispier than butter. Thanks for the recipe!

Hi Gina! I've never tried to bake them...I think you can try with both high and low heat, grill on, at 200°C-395°F until brown. Grease the top and bottom with some oil before bake them. Let me know how they come out!

I would add some chopped spring onions to add colour and taste to the potato cake. Made it but the mixture is very gooey and needs a lot of flour on the side to help shape the potato cakes, and also requires a non stick pan to cook in. The result was very tasty.😋

made these today but only had russet potatoes on hand, a waxy potato would have been better as it has more moisture and as an experiment, I used a hard vegan cheese in the middle instead of my smoky vegan cheddar, not melty like mozza or cheddar; so, next time going to use waxy potatoes and use a cheese that will melt easily BUT they were still delicious (I did add a bit of onion powder to the potatoes) - thanks !!

Tried this recipe and it was great 👍 My potatoes were dry so I didn't add much flour. What kind of potatoes did you use? I added a little bit of mayonnaise and chives and I think it gives it a great, creamy taste. I think oil makes the pancake crispier than butter. Thanks for the recipe!

Reminds me of the potato croquettes my Nonna made with Fresh mozzarella in the middle but lots of Parmesan cheese and finely chopped prosciutto mixed in with the potatoes, then breaded and fried. Very popular in Italian restaurants in NYC. I may give these a try for the restaurant staff. They didn't get to try the mozzarella bread I didn't work last Sunday. (Update) it worked! I left them in the airfryer for 10 min. on 200°C and flipped them after 5 min.

Hi Gina! I've never tried to bake them...I think you can try with both high and low heat, grill on, at 200°C-395°F until brown. Grease the top and bottom with some oil before bake them. Let me know how they come out!

I would add some chopped spring onions to add colour and taste to the potato cake. Made it but the mixture is very gooey and needs a lot of flour on the side to help shape the potato cakes, and also requires a non stick pan to cook in. The result was very tasty.😋
