A few pointers ,split your meat portion in half then those halves in halves that's about a qtr pound split them one more time into balls so your portions are even get some neutral oil smoking hot and place a ball on your cook top then smash it to the grill ,wait till release then flip 🙃

Burgers should be well done for safety reasons, because in ground beef, the outside of the meat that might have been exposed to the gut bacteria in the slaughterhouse has been mixed in with other parts of the meat.
In Canada most of us think it is gross if your burger is not cooked well done. At a restaurant you don't get asked how you want your burger cooked you just expect your burger to be fully cooked when you order. Ground beef is not like a steak where you can cook only the outside and kill the bacteria so it is safe to eat; you have to cook it thoroughly to kill the bacteria. With grocery store bought meat you do not know if a bad spot from the meat was ground and is throughout the beef now.
