why not kick the motor out of gear when reeling in a fish? It would make it a lot easier.

Few reasons normally.
#1: Helps keep tension on the fish especially when trolling for salmon out here in BC as we have to fish with barbless hooks
#2: You have the chance of getting multiple fish on at once when you keep the boat in gear and trolling.
