Wow, I just learned something! I actually did think flapjacks and pancakes were the same thing! I looked at the picture and thought, "Why are those flapjacks just one big rectangle, and why do they look more like bar cookies than pancakes??" Now I know why!!

Gemma, I love the mug meals, deserts, etc. wondering if you have done a bread pudding in a mug. Flan in a mug would be yum too.

@@leelasaraswat4662 You know these remind me of a cross between those unbaked oatmeal cookies we used to get sometimes in the school cafeteria and a Rice Krispy treat. I'll bet they are delicious. They're certainly worth trying.

My middle child was born on St. Patrick’s Day. He was born with red hair which was unexpected because even though our ancestors were Scottish, Irish and Dutch, very few of us end up with truly red hair so it seemed extra fitting that he would be born that day. Watching this reminded me of when he was a preschooler (which seems like just a couple of years ago). He will be 19 this year. The memories of my children when they were little are so precious to me. It’s beautiful to see you building lasting memories with your little one.
I make a conscious effort to pass on our Irish traditions to Georgie, because it is part of his heritage. All the more so, because we live in the US, so traditions from my side of the family will be up to me to include.

I'm impressed with how thoughtful and methodical George is being in the kitchen helping with this recipe. Most children that young want to help their moms bake, but once they get in the kitchen their attention tends to go "all over the place".
Perhaps he's become familiar with the process of baking, seeing me and Ami go about it in the kitchen every day. But he's also just like a typical 4-year old, with next to zero attention span. He gets distracted too.

In South Africa
Irish/UK flapjacks = crunchies
US pancakes = crumpets or flapjacks (although ours are smaller)
US crepes = pancakes

This is very similar to South African crunchies. Our recipe has less oats, coconut and is thinner. So once it has cooled it is crunchy....as the name suggests😁

I’ve always called them pancakes. I really never knew what a flapjack and knew that word was used in some areas of the country. My family sir names are Murphy, Downey, Madden and Davis. I would love to visit Ireland but not the normal visitor traps. I would love to visit traditional weaving, linen making, traditional baking...

What's the point of having George butter the pan if you put down parchment paper after?
Flapjacks can be super sticky if the pan is not properly lined and greased. I've learned the hard way it's not worth skipping these steps 💚
