    Hello Bakers! Thanks for watching this video... This is the first video in my macaron perfection series, where I aim to make popular flavours of macarons as perfectly as possible - and give you guys the recipe! Just a clarification about the caramel - in the country I live good dairy is hard to come by and prohibitively expensive. Almost all the cream here has additives to stabilise or thicken it which is such a shame. The original caramel you see me making was made with Anchor, which was terrible. Once I found a cream with way less stabilisers I was able to get the smooth caramel you see at the end. Even this had carrageenan though - what a shame :(
