I'm an ex-figure skating coach who just retired. I started off with ballet training, which I loved. This move in skating is called an axel, and the technique is the same as you describe, except we lean a little forward on the take off prep, so that we can hit the toe pick of the blade; and the kicking leg is bent (we are kicking the knee essentially). We straighten the kicking leg a little more if we want a big, delayed jump. Yes, we point the toe inside the skate boot because it is how you control the end of your leg. It is very similar. I really like your descriptions, particularly for partner work.

I learned to do it from one diagonally, doing just a half, then they taught me how to do a double diagonally and then I learned how to do a double to the side
Hey, man! Have you noticed that when you do the jump from one step and from jete en tournant it's like the same height? That's not a good sign. Your jump from one step is very good, but in combination you make a couple of mistakes.
Yes, that’s quite common actually, try to make your last step before jump a bit bigger than the other steps! When we prepare for saut de basque we create a lot of momentum and that last step will help you just go up!
