For sweet popcorn it's not enough to sprinkle the popcorn with sugar as it will all fall off and you'll end up with most sugar on the bottom and tasteless popcorn. It's better to heat up the oil until it's really hot, then stir in sugar and let it caramelize for 10 seconds while stirring, then add the kernels, turn of the heat and shimmy the pot regularly. Tastes like the sweet popcorn you get in cinemas! Fun fact: in Germany we usually have sweet popcorn and I was mindblown when I realized in my twenties that the popcorn I saw in American movies and soaps is actually not sweet!

The discussion about including the “pantry staples” or not is interesting. I don’t think I’ve thought about it before. I think I’m kinda in the middle. When it’s basics like oil or some spices etc I totally agree. Most people have it. No need to include it in a budget shop calculation. But when it expands to leftover frozen fruit, boxes of rice or pasta, leftover vegetables etc these aren’t staples to me anymore. This is actual food and I personally do not have leftover food from previous weeks lying around. Part of being on a budget for me means my spending is a lot more calculated. I tend to only buy what I need for that week’s recipes and no more. No impulse buys. No leftovers. Except things you kinda have to buy in bulk like oil, sugar, flour. But other then that not really. 🤷♀️ I think it’s because my personal way of budgeting means not having different meals on different days? Like when I’m meal planning I pick a breakfast/ lunch / dinner for the week. And eat the same thing everyday for a week. So a box of pasta is enough for dinner for a week with no leftovers for example. Part of the reasons I love these videos is you sometimes show how you buy something to be used in multiple different recipes in the same week. One item but more variety. I find those ideas super useful! So it’s been interesting to think about and to see it included in this video for the first time. I really appreciate the obvious effort you went through to work it all out for us. And I agree, you absolutely should use up what you have and not waste just for the sake of a video. Keeping track and telling us is more then enough of a gesture. Thank you! 👍

Oh! I already commented but I just got to the end of the video. I’m actually really looking forward to the cupboard clear out challenge . My mom use to do the “everything but the kitchen sink” stew which was never the same twice 😂 And if I could request a challenge it would be something like “10 ingredient/ 10 meals” or something like that. Using the same basic ingredients in a variety of ways. Because that kind of advice helps people on a budget a lot. 👍

Yes I was thinking this! Though I ate extras we definitely had food left from our food shop! We had half a cabbage, Brussels sprouts, a few apples and a couple bananas, yoghurt, spring onions, loads spinach and loads of lentils! So thanks for reminding me of this because this probably adds up!
I'm not vegan but have watching some your past food videos this week . Been out today and brought smoked tofu, so I'm now super chuffed to see this as an ingredient. Food shopping tomorrow for the rest on the list. First time trying tofu.
I went veggie 5 years ago and had never had tofu, now it's one of my staples and I adore it. It gets a bad rep in the west for being flavourless and sponge like. That's mainly because people under cook and under season it. My tip to you is if you want a more meaty texture then cook it for longer.
If it's the Tofoo brand, that is sooooooo nice in a creamy pasta. Adds a smokiness the way bacon would (so pigs also much prefer it 😉) so just cut it into small thin rectangles like little pices of bacon (idk like 1-1.5cms and maybe half cm thick?). Nice and smokey!

Nutritional yeast is so versatile. I make a "chicken" bouillon with it for soups and also add it to a tofu scramble. Amazing how it can taste like chicken, egg, and cheese at the same time.
The popcorn method you’re referencing is on the back of most popcorn kernel packets! My mum also taught me when I was a kid, so I think it’s just the ‘known’ way to do it 😅
Growing cress with seeds is super easy. Unfortunately it doesn't regrow once it's been cut. It's a very simple plant. It made me so sad when I found that out because I love cress and loved the idea of it regrowing.

People often say curry takes forever, mine takes about 15 min and it's one of my 'can't be bothered' recipes. I just fry a bit of curry paste, add the veg for a minute, add coconut milk and fresh coriander stems, put a lid on it, simmer until the veg are done. Top with yoghurt, pickle and the coriander leaves.Turns out really creamy and thick, great with pumpkin, cauli and carrots.

Hi Madeleine! Thank you for this great video!!! I make popcorn exactly the same way except I don't do the 30-second thing and it's perfect every time! Also, my measurements are 1/4 cup canola oil and 1 heaping cup kernels and I love it like that. I love coconut oil in popcorn too!

Hi Madeleine, I loved this video - tbh your videos are my favorite thing to watch on here, they feel very positive, relaxing and uplifting :) I have been practising baking my own bread (it's life-changing!!) but am struggling with getting the loaf to rise properly, it spreads and flattens a lot whilst proofing. Any tips to get a more compact shape? Thanks xx
We grow a lot of fruit during the summer and freeze for the winter, so we eat just as much in the winter as in the summer. We love a compote for breakfast with yoghurt or to top oatmeal. Xx
The way I make popcorn is by putting all the corn into the pan with oil (I think a use less oil than you and it works fine, in case you care for reducing that - although using less than needed will cause some of the corn not to pop) and stir it until all the corn turn into more of a light yellow colour, and then I close the pan, turn down the heat and just wait. :)
The vegan egg was really Good! I forgot the cress even though it was on my shopping list so I had it with some sweet potato and carrot hash for lunch...so good! Just did our 2 weekly Asda shop and have 3 of your recipes on the list to try - We managed £52 for 2 weeks for two - would have been less if Asda had a world foods aisle like Sainsburys or Tesco but Asda only has a very tiny section. I absolutely love Sainsburys world food aisle its really cost effective compared to even the own brand stuff.

It's easy, just amp up the rest of your foods. It's not the cooking part that will be difficult, it's getting used to eating fewer carbs, and that's psychological work for sure, the hardest part. Good luck, you're taking care of your health and that's amazing!
I don't know if you find this but sometimes smoothies (esp with fruits) send my blood sugar really high and then it crashes and I feel really hungry! It's annoying as it is a great way to get lots of goodness in. I thinking eating it with some protein avo toast does help with this xx

We call sweet popcorn "Kettle Corn" here, since I assume the traditional way to cook it is in a kettle!

You can add salt straight to the kernels of your popcorn at the beginning. It makes a difference.

A good way to have sweet popcorn is to add icing sugar
Put some nutritional yeast on top of fresh popcorn for some cheesyness it's so delicious 😋
I will definitely be making that chickpea curry, but substituting other beans because my son isn't a fan of chickpeas but he loves curry!

The way I make popcorn is by putting all the corn into the pan with oil (I think a use less oil than you and it works fine, in case you care for reducing that - although using less than needed will cause some of the corn not to pop) and stir it until all the corn turn into more of a light yellow colour, and then I close the pan, turn down the heat and just wait. :)

The vegan egg was really Good! I forgot the cress even though it was on my shopping list so I had it with some sweet potato and carrot hash for lunch...so good!
Just did our 2 weekly Asda shop and have 3 of your recipes on the list to try - We managed £52 for 2 weeks for two - would have been less if Asda had a world foods aisle like Sainsburys or Tesco but Asda only has a very tiny section. I absolutely love Sainsburys world food aisle its really cost effective compared to even the own brand stuff.

An air popper without oil is even better! You can sprinkle nutritional yeast on it if you like
Pasta is also good with garlic and peanut butter.

It's easy, just amp up the rest of your foods. It's not the cooking part that will be difficult, it's getting used to eating fewer carbs, and that's psychological work for sure, the hardest part. Good luck, you're taking care of your health and that's amazing!
I don't know if you find this but sometimes smoothies (esp with fruits) send my blood sugar really high and then it crashes and I feel really hungry! It's annoying as it is a great way to get lots of goodness in. I thinking eating it with some protein avo toast does help with this xx
One of the main differences with Veganism and being a non-Vegan is that for non-Vegans, it's more expensive to be healthy, and for Vegans, it's more cheap to be healthy.

No hate or judgment but you really should look at how you label your videos to make sure they’re accurate. As I couldn’t have taken £16 to Tesco and made the exact meals you did as I don’t have those extras in my pantry.

Can't relate to the fruit thing, I live in so cal and there's tons and tons of fruit (especially citrus and avocados) year-round and I find pounds and pounds of it every day so I don't pay for it. Other food is expensive though
