It is my observation that too much head space in your carboy may increase the chances of wine oxidation. You should rack that wine in to a smaller container where you could fill up to the neck.
Your right. It should be done as soon as possible. The wine should come up to the neck of the carboy. This will restrict the oxygen from getting in. It should not be left any more than a couple of hours.
All excellent points. We opted not to with this batch and didn’t feel that it impacted the flavor noticeably for our palettes. We plan to adjust for future batches.
I’m on day 14 of this exact kit. First off, great videos! You’ve helped make this a lot easier. My question is regarding the oak chips. How did you prevent them from going into your secondary fermenter? Or did you? Thanks!
We used an auto siphon which mostly keeps the larger chips out. In secondary, you try to draw off when bottling without disturbing the sediment at the bottom. I’m about to start a reisling and can describe the process better in the next brewing video!
nice video, 2 questions, do you have to move the auto-siphon as liquid decreases or does it stay in place? do you use one of those plastic coated wire handles that go around the neck of the carboy? was thinking of getting one but afraid it could break the neck. any advice appreciated, thank you
Thanks for watching! We like to set the tip of the siphon just above the yeast so that it doesn’t suck the yeast while racking. However, sometimes you jostle it around when you’re working and you might need to move it. Regarding the wire handle- nope! We either bear hug the glass carboys, or, put one hand on the neck and the other on the base to move them. Good luck brewing!

True, but in just two weeks I dont believe that will be a problem.

New wine sips are good for learning . 2 year age is better!
