Hi! Fermentation actually happens pretty quickly! In this one, I’d estimate that a majority of the ABV is achieved in about a week. Wine is typically aged for several months to years, which softens the tannins and makes the alcohol taste less harsh. We bottled this batch once fermentation and clarifying were done and laid down the bottles to try after a month, now six months, and the taste improves over time.
Sorry for the late reply!! I haven’t been able to drink for a while, so haven’t tried any in the past seven months, but others report that it’s gotten better with age!

You don't rinse the spoon between the sterilizer and the wine. Does your sterilizer not require rinsing?
Technically no, it doesn’t require rinsing. If you rinse you can add contamination back.
How does the wine ferment so quickly? I thought it takes a few years for wine to ferment in a barrel.
