      That doesn't even sound appealing. I don't see how anything other than a well done burger (made from ground meat) would taste better. Steak is what has different texture, chewiness, and sometimes flavor depending on the rarity. I'm eating steak right now and I don't think I'd pay for an undercooked hamburger.

      Beefburgers cooked medium has a completely different texture to a beefburger cooked well done. The longer its cooked, the drier it becomes. You can have a well done burger thats really juicy, but you can see why people push the boundaries. Its also confusing as you see pro Chefs like Gordon Ramsay for example doing video burger recipes...and the burgers are always bright pink.

      To be safer, I dunk the blade steak in boiling water for 2-3 seconds then use a food processor to grind it before making my patties. I enjoy my burgers medium to medium rare, so far so good.

    I’ve eaten, medium, medium rare, and even rare hamburgers, and I haven’t been sick (at least that I know of). I don’t know if I’m lucky or what, but I tend to like the taste of a burger that hasn’t been cooked to sh!t

      Yes they will if you keep it above 130 for like 1 1/2 to 2 hours it’s perfectly fine or you could cook the outside of the steak slightly before grinding it for a burger

    If you cook a burger sous vide at a 131 farenheit long enough bacteria die of eventually. then you only have to sear the burger of directly after. Not that I would want that low temp but a lot of times we only get to hear about what temp bacteria dies of immediately. Not that time are a crucial factor when it comes to kill of bacteria and not have to get to high a temp if prefered less. at a 131 f most bacteria dies of quicker then they multiply.

    oh please....how many millions of people by now have continued eating "undercooked" (pink) burgers? do you know what the typical symptom of food poisoning is? the shits and the occasional vomiting, thats IF you get it. any case you believe you know about "fatal" food poisoning, is generally lined with other factors.

      ​@@donovancroker1153 In all honesty though it's more of a situation of risk management. Driving without a seatbelt would be a much larger risk, especially when people are driving more reckless than ever. I regularly order medium rare because I know the risk, and I understand though, that I'm a young, healthy person with no immune system problems. So if I did get sick it'd be minimal. I'm fine taking a very minor risk for a juicier, more flavorful burger. If I was at any risk for illness? Okay sure, I'd avoid it. But since I'm not? I'll take the chance.

      I'm afraid it's a gambling game my friend. You could be eating rare burger all your life and never get sick...you could have one once and die of serious food poisoning.
      The thing is that's an unnecessary risk.

      Dying of food poisoning now is extraordinarily unlikely. You could have the worst case of food poisoning the world has ever seen and its still hugely unlikely. The medicine in that area is too advanced. It isn't the dark ages anymore where the cause of death was things like food poisoning and gout.

      Steve Alderley that also depends highly on your health for example over half of the population in America alone is overweight and therefore would have ideally a weaker immune system especially if they have diabetes or something like that but also women are more vulnerable children are more vulnerable elderly are more vulnerable it's really not that hard to get food poisoning

    What if we were to sterilize the whole steak in boiling water for say 30 seconds. Then grind the steak into ground beef. As the outside surface of the steak is sanitized, realizing that timing is an issue , the grinding process and a medium rare burger would be safe would it not?

      i think a more efficient way to go about it is to actually "flame" the outsides of the steak either with your gas stove, a propane grill, or just a handheld torch.
      We would do this in biology to sterilize equipment. Germs cant pass through fire, so direct contact with the flame should be intense enough to sterilize the outside, without actually cooking the inside of the meat, leaving it still raw.
      So, pat that steak as dry as possible, turn the gas to high, and flame up that meat all over. As long as you pass the entire surface area of the meat directly to the flame, it should be sterilized.
      Boiling in water would transfer too much heat through the meat and cook your steak. But theoretically, flaming the steak should kill all the outside bacteria without transfering heat and cooking the actual inside of the meat. Should literally take no more than a minute or 2.

      I think there's alot more to it. I only eat rare burgers. Never gotten sick from it. I suppose if you don't eat rare meat your body won't be used to it and might not be able to deal with any contaminants.
      Not a scientist though this is just my theory.

      Nah just lucky. You don't necessarily get salmonella from eating raw chicken or eggs but the likelihood is far greater if not prepared correctly.

      I know you wouldn't want to make beef tartar with ground beef but that's cus a lot of shit goes into that.
      That's why you need beef that you finely mince yourself and than it's perfectly fine. So how would grinding your own quality beef in a clean grinder, shape it into patties and give it a quick sear. Why would that be a problem?

    This is really only a problem in the states. The rest of the world has common sense, we made it illegal to serve anything under 160-165.
    The amount of people that don’t understand how dangerous it is in the USA is mind boggling.
    Whenever I’m in a restaurant there, it’s so jarring hearing them ask me how I want the burger that I always reply rudely with “cooked” and they genuinely don’t know what I mean…

    It's all about risk management. An underdone burger is juicer and more delicious, but it carries the risk of food born illness. There are ways of managing the risk. Freezing would kill bacteria, proper handling plays a role too. I probably wouldn't order a rare burger somewhere I dont trust.

      Freezing does not kill bacteria, it merely slows or stops bacterial growth. The bacteria itself is still there.

      Freezing the meat or whatever you’re freezing just freezes the bacteria that was on the food and slows the bacteria growth but the bacteria that was on it from the beginning isn’t going anywhere

    I should have died many times if you were right. I've had pink burgers many times and never even got sick. You can blanch meat before freshly grinding it to avoid contamination. You can also cook it sous vide. Or use a really clean source of meat which has very little bacteria. Also my stomach is not an agar plate, so this experiment is seriously flawed.
    I've also tasted cake batter my entire life. It has raw eggs in it. Never got sick from that.
    If I was very old, very young, pregnant or immunocompromised I wouldn't take those risks obviously.

    There are techniques for cooking a pink, juicy burger that is safe. It involves essentially pasteurizing the meat after it was formed into a patty. It is cooked long and slow and kills all the bacteria, and if it is freshly ground it will be pink after this done. Then sear both sides (as hot as you can get your grill to make a perfect burger).
    Just an FYI - pasteurizing is a heating process designed to kill microbes to make milk safe. There are two factors: TEMPERATURE and time at temperature. Some of the bacteria can live for a while even at 140 degrees, which is why there is growth on the inside of the 140 burger. If there were a magic grill that kept is at 140 degrees for 15 mins it would not have the bacteria count we saw. So there is a magic temperature that all bacteria will die after some magic time and that it what I use. I am purposely not giving advice. Do your own research. One other note fresh ground meat from a butcher shop (not a grocery store) is a VERY important part of how to eat ground red meat. Fresh ground meet is imperative. Or you can grind your own once you know how to use the grinder and clean it safely. I would never eat and ground meat from a big box store or that was sold frozen. Now that is scary.

      what people don't realize is, things have changed since we were 5. You might still enjoy the same foods, but that doesnt mean the world and the actual food your eating now is the same either.
      Cows today are now fed an all grain diet and hormones instead of grass fed and gmo free. What do you think that is gonna do to your body? maybe make you gain more weight than when you were younger? Have more illnesses or nutritional deficiencies that maybe you would not have gotten? Hair loss? Low testosterone? Less muscle mass? Who knows, but I definitely dont think my food has stayed the same since 1995. We have more kids with cancer, obesity, and diabetes than any decade before us. Our food and environment has definitely changed.
      Grain feed meats make the animal more susceptible to carrying e.coli than a grass fed one because grass fed animals have a stronger stomach acid which means they carry less harmful bacteria.
      I love rare meat too, even extra rare on my steaks sometimes, but for a burger, the only way to go is to sear the outsides before grinding. You can still get a nice medium to medium rare out of it if done right.

    HELL YES!!! I always get hate when I tell people I wont eat a rare or pink burger... its fuckin annoying. These people who believe that pink/under cooked burgers are safe to eat are very difficult to convince otherwise. Even if they saw this video and were told by experts that its not safe, they would still argue that it was safe. :(

      You realise you an eat medium rare and Medium which is perfectly safe. Rare is cooked but typically grilled/sizzled Ona. Pan not ovened the whole way. Well done steak is a disgusting piece of rubber that you have to gnaw out in your mouth for minutes until you can finally have a safe swallowable piece of meat. I recommend Medium for the first time venturing out of the "well done" zone. I always have my Burgers medium rare. If cooked properly it absolutely melts in your mouth and the juicy flavors remain. If you want to continue chewing on a rubber boot by all means continue.

      Butters, You would do good to take a course in microbiology. Or heck, just a biology course in high school.
      That simple study, although not the most rigorous, pointed out some very simple and undeniable differences between the two types of meat - steak vs ground, and why it is MORE important to more thoroughly cook ground meat. ESPECIALLY, and he did not mention this, if it is being consumed by the young, the elderly, or the in-firmed (with poorer immune functions).
      That said, I like my burgers med rare.

    I haven't read all of the comments so I do not know if anyone has mentioned cooking sous vide to enjoy burgers at a lower temperature. Pasteurization is achieved via temperature over time, so lower temps for a longer time are also safe.

    There's about 6 small spots on that plate for the 140 degree burger. No significant growth after 18 hours. You won't get sick, eat that burger rare or medium rare.

    This is absolute nonsense. Ive eaten THOUSANDS of RARE burgers. Not one time did i get "sick"....maybe had minor digestive disturbances, but those are 100% negligible.

      bavondale no it isn’t , it has to cooked fully for a burger. That’s why most British people complain about certain American restaurants when they say it’s cooked properly when it isn’t . You can’t and shouldn’t eat a medium rare burger. There a Denny’s in Swansea Uk and people complaining about the burger became it was rare in the middle and most restaurants will give you a proper fully cooked burger. anyone who has food poisoning in a restaurant can sue them

    I totally agree with you and i dont like pink burger ether but if you ground beef is really fresh its fine for example in Germany there is this Dish Mett Or Hackepeter whitch is basicly seasond raw Ground Pig meat and its save to eat fresh (very litle bacteria)

      It’s not actually. The animal could have bacteria in their gut or stomach that ends up getting ground up into the meat, so even the freshest ground beef is risky.
