Not sure why the first side overcooked, the vagaries of cast iron I guess. In a comment on Heather's video I mentioned that I had two Griswold waffle irons, I misspoke, I have a Wagner and a Griswold and I couldn't find the ring for the Griswold so I used the Wagner.
OMGoodness....i never knew they made irons like that. it's beautiful!!!!!! this was so exciting to watch! hahaha it's like a whole new world has opened up to me. thank you so much for sharing this....i want to see more!!!!! hahahaha and i am loving your fur baby!
+The Kneady Homesteader Once you get the hang of it, they make fantastic waffles, crispier and fluffier than you'll get from an electric iron. I did a little search before I posted this and Bed, Bath and Beyond carries a 6" imported cast waffle iron for about $20 but if you want an old one I see them fairly often in second hand shops and Goodwills for about that price. They almost never have the ring but the ring isn't really necessary, you can just lay it on a gas burner. Pick one up and give it a try and good luck.
+The Kneady Homesteader Heather, Amazon has them by Rome for 19 dollars.I used mine for the first time today. I love it. They don't have the collar. They sit right on your burner. I have an electric stove. Worked fine! You have to flip it.

You can get a modern iron with a base similar to the antique. Made by appellation cast iron. The great American waffle maker. Just got mine yesterday.

Here it is 5 years later and you have your refurbished 50's wood stove fired up. Look forward to seeing the waffle iron in action on it. We have the high base Griswold iron I used on our wood stove. While learning, I smoked the house up, holy..., had dark sides, fantastic drippings and finally some edible ones, it was a hoot. Here's to some fun failures while you are on the road to success!
I've acquired a few more waffle irons since then and waffle making is on my list of videos I'm gonna be doing on the cookstove.

For what it’s worth: if you’re still using this waffle maker, the wire handle is what you’d use to flip your waffle- lift it by the wire with one hand, and flip the paddle by spinning the paddle handle with the other hand, then set the paddle & ring back down on the stove. Cool move, huh? Enjoy!
the low rings were meant for wood burning cookstoves that had removeable cookhole covers or eyes, so you could spin the iron without lifting anything. the high rings are for gas and electric cooktops, or hobs in the uk.

+grant50 It's kinda fun making waffles this way, although if I wanted to be really old fashioned about it I could've hauled my wood cook stove down from the shed, set it up and used that but that's a bit more of a project than I feel like undertaking right now.

Yeah, I'd say it was over cooked. You may have the heat a little high. After watching you use this Wagner, I'm glad I have a Griswold. So much better fit and finish. And. . . Lard? I use a tiny squirt of canola cooking spray. And I don't really think that was a ringing endorsement from the Underfoot Mastiff.
Lard is probably the healthier option, too
How high was the temperature on your stove? I have a CI waffle maker with out the ring. I used a stove like yours, just seemed to take a good bit of time to cook them! They sure do make good waffles though!
+Sharon La Tour I had my stove set on 8 (out of 10) which is just a bit short of glowing hot. If the iron was directly on the element I would think 6-7 would be about right on my stove. if yours seem to be taking too long, go ahead and try turning up the heat a bit but not to where the element is glowing because that high of a heat can warp cast iron.

I noticed the wooden handle on you cast iron skillet. Can you put that in the oven when you season it or do you just do it on the top of the stove?
I don't season iron in the oven very hot or very long, 225 degrees for an hour and then just start using it works best for me, but wood can shrink or crack in the oven so stovetop is safer.
Almost all wood handles are removable. I just did one and swore that the handles were permanently fixed but after reading that they all come off i tried again and it worked. Some screw off and some just pull off and are pressure fit. Remove handles and season as normal.

one of these days when i find all the parts i,m going to try mine today i made buscits on my old wood cook stove the first hour the writing in the cast is hard to read and i removed one of the lids and discovered i had the damper open when i closed it the buscuits started baking this outside this old stove hasn,t been used in fifty years or longer ivan from illinois.
make that batter thicker and more buttery, add cinamon and sugar pearls and make yourself some waffle from my city, liège. the common "belgian" waffle (not the bruxelles one thoug)

Now, that's a waffle! In Sweden you never see these big thicker waffles unless you eat at icecream/waffle shops. At home it's puny thinner waffles meaning they are crusty almost all way through unless you accept lighter shades on surface. Luckily I have an electric cast iron so it gets reasonably hot but not perfect... Hmm... Me needs to build new thermostat for it. Any good recipes for batter?

I think I would cut my cooking time back, or at least turn the heat down.
My grandmother left me her waffle iron, which is identical to the one you are using. HINT: Put the batter on the hotter of the two sides and immediately flip it over and hold together for about 5 seconds so all the squares are filled on both sides. QUESTION: Can you use clarified butter instead of melted lard?

Wow! 1892! I love cast iron, admittedly I need to use mine. I have it, but I don't use it. I'm inspired... Slightly moist English Mastiff!! I work as a pediatric night nurse-in the child's home while she sleeps with various medical equipment in use for me to monitor. I try to be as quiet and stealthy as I can. The way you smoothly segwayed to the mastiff comment made me blurt out a laugh. Shame on you Sir, shame.

+FishHeadSalad Yep, this one was made between 1892 and 1910. Wagner renewed the patent in 1910 so ones made after that have a 1910 patent date.

This was almost as good as your cinnamon roll video. Truthfully, the only reason the waffle video was not quite as good as the cinnamon roll vid is the lack of Irish whiskey in the production. I hope you will find time to rectify this oversight. MC & HNY!
