  • The first thing that comes to mind when I think of Lao food is Lao folks calling me to join them at any time of day and at any random place for some papaya salad, which they're usually enjoying with some classic Lao style meats and of course, some sticky rice.

    Interesting that the last shop uses the word "som tam". That's how most of the "som tam" vendors sell it in Thailand. Some places offer 15 or more varieties and of course each variety is made to the taste of the customer.
    I like the cucumber "tam". "Tam sua" is another good one; that's made with "khanom jeen" noodles.

    The spice the sausage seller is talking about must be Zanthoxylum limonella. I haven't heard a common name in English, just the Thai name for it: "ma-khwaen" (มะแขว่น). It's also called "ma-khaen" (มะแข่น).
    It's a common spice and is used in many different dishes.

      That sounds like what she said to me. I am not familiar with this spice, but am now a fan. Will have to search it out in the market.

    Here's a way to remember which is the mortar and which is the pestle... Think of the Thai saying which refers to hypocrites: "meu theu sahk, pbahk theu siin" (มือถือสาก ปากถือศีล), which translates roughly into "the hand holds a pestle while the mouth holds precepts."
    The humor of the expression comes from the fact that the pestle looks similar to a certain part of the male anatomy which also starts with the letters "p" and "e". 🤣🤣🤣

    The word "nua" meaning tasty was around long before MSG, so I doubt it refers specifically to umami taste.
    Thai's the same way. The Thai word for MSG is "pongchurot" which translates literally to "powder (to) elevate flavor".
    I think "nua nua" just means full of flavor, as opposed to bland.
    Unfortunately, many vendors overdo it on the MSG. I ordered "nam dtok" one time, and the seller put a heaping tablespoon in it. I took one bite and spat it out. The dish was ruined.
