    My friend, Michalis Solidakis, invited me to his restaurant, “Raki Meze,” in the village of Sykia of Sitia, to demonstrate the modern way of cooking antikristo, using the same ingredients-lamb and salt-and burning wood, but with a modern antikristo oven.
    He followed the same ritual of piercing the meat on metal rods and salting with coarse salt. The final result is as good as the original method, as long as you use the correct type of lamb.
