    Some of my favorite Cretan delicacies is the traditional Xidato sausage, made with pork vinegar, and a variety of spices that vary depending on the specific location in Crete. While you can find them in retail at specialized shops, nothing compares to the authentic Xidato made by an expert in the craft.
    My friend Stelios Perakis, a skilled butcher and a chef in Sitia, kindly invited me to witness the making of the "Xidata Sausages" and another local recipe, the "Apaki."
