Quick & Easy No Knead Beer Bread | a 1990's Recipe

- This recipe will knock your socks off! Super fast....super easy...super delicious! Serve with soup, chili, stews, etc. Change out the beer -- use a pilsner, or use a dark stout for a different flavor profile. Enjoy!
Quick Beer Bread
3 cups self-rising flour*, or
*This is the recipe you can use instead of purchasing self-rising flour: 3 cups all-purpose flour plus 1 teaspoon salt, and 4 ½ teaspoons baking powder.
¼ cup sugar
1 bottle (12 oz) beer of choice
¼ cup melted butter or margarine
In a large bowl, stir together flour, sugar and beer. Do not over-beat. Spoon into a lightly buttered 5” x 9” loaf pan. Pour melted butter over the batter.
Bake in a 350 degree oven until golden brown and begins to pull from the edge of the pan, about 45-50 minutes. Check doneness with the clean toothpick test.
Remove bread from the pan and let cool on a wire rack.

Hi Jill.. What fun to watch you make beer bread!! I made it in the 70's for my husband when he was still logging. He used it for everything. Sliced thin for sandwiches, sliced a little thicker for French toast, and enjoyed it just for eating with a meal. I loved the way the beer smelled too when I combined all the ingredients. 😍 I haven't made it in decades and had forgotten about it. So.., "Thanks For the Memories." You and the director made me want some! 👍 I used to drink a bottle of cold beer with mine! Love! Jean

My dad made this from a newspaper recipe back in the 70's
It's an old recipe that did make the rounds during the 70's. Glad he was able to make and enjoy it.
I've made this bread with Killian's Red beer, and it's fantastic. Maybe add a little dill to the melted butter when you drizzle it.

Tks for this video. I used to make this (I don't recall pouring butter on top altho i may have) and sometimes i would add shredded cheddar cheese into the dough before baking it. I put probably a cup or 2 of the cheese in it and yum! Also, i used to cube the baked loaf and toss the cubes in a little melted butter and sprinkled seasonings on them and toasted them in the oven on a cookie sheet to be crutons. Less butter if you want them real crispy and crunchy or more butter if you want them soft inside.
Additionally, i used honey brown beer as my beer of choice. Has a bit of a sweetness to it.
That sounds great! Rich but I love cheese so I'm all in with those additions.
This was so fun to watch! I used to make beer bread all the time and I always make the self rising flour because I can use organic flour , Himilayan pink salt and aluminum free baking powder. I have also made this with part whole wheat flour. I also have an old bread machine and started using that again since I finally found an easy fail proof recipe. I reverently tried making no knead artisan bread and failed. It wasn't your recipe. I think the beer bread recipe is great for beginners because it always turns out good. It also makes a cute gift at Christmas if you decorate the beer bottle or give a whole 6 pack decorated like reindeers. (Very easy to make with pipe cleaner antlers, google eyes and red pom noses- on pinterest.)
Super clever gift idea! I've not used a bread machine before. My niece has one and she loves it. And for a no-knead bread recipe, I wouldn't know how to guide you with your use of a bread machine. But, you are right about a beer bread recipe as a starting point. It always makes you feel so much for confident in the kitchen.

Add 1/4 Cup of oatmeal and 3T of walnut pieces. Makes a great dessert bread. Olive oil instead of butter as a variation. Thanks for the videos.

Beer bread is so much fun to make! I love it with a hearty stew or soup but hubby isn't much of a fan so I haven't made it in awhile. It makes a nice gift too...mix up the dry ingredients in a mason jar and combine it with a nice new bread pan and a good beer. Include baking instructions and voila, fast gift. Edit: the last time I made it I used Vodoo Ranger Atomic Pumpkin ale...yikes, it was spicy!
With stew is the best! I'm not sure why but I guess it's the beefy flavor of the stew that compliments the beer. Gifting this is a great idea.

I have a friend who makes it with a bottle of soda. She says Mt Dew is her favorite for the sweetness. I would think maybe rootbeer? or 7up? I used to make the package kinds that cost so much and you still have to add beer. I didn't realize it was just flour and sugar I was paying for! lol Thank you for sharing.. now I need to make a big pot of beer cheese soup to go with the beer bread! :-)
Soda? Very interesting idea. I'm not sure about the Mt. Dew -- I think you're right....the sweetness. Root beer would be interesting. You are right about the cost. Total rip-offs when buying it pre-made.

Great! I'm going to make this tonight to go with my tavern roast and seasoned honey roasted carrots! I've been making a lot of sandwich breads to pass to the elderly in my little neighborhood but requires needing etc. The only problem with that is I cut my thumb on a can last night so I can't do this today as it would not be sanitary, I've been wanting to make this bread anyways so low and behold you piped up with the recipe! Perfect! Thanks a million! I don't have dark beer, I only have light. Will this work until I can get dark?

When I make Breads I always Slice From the Center so that the Two Halves will Seal together to keep the cut as Fresh As Possible!!!

With so many people Self-Isolating ( Yes, Both My wife & I) there are So many people that are Learning about "Cabin Fever" and the Short Temper that can Accompany it. I've made 2 Loaves in less than 24 hrs. and used an 8" Cast Iron Fry Pan with cooking Spray. Works Great!!! I wonder about adding some Diced Apples with Cinnamon & Raisins?

How do you store
The bread and how long will it last?
I usually wrap it in foil and leave it on the counter. You could also store in a plastic baggie. If you want, you could also bag or foil it and store in the fridge. It's a forgiving bread

CRAP, I messed up and added melted butter to batter? DAMMIT! I stired it all up, added only a bit more flour and put less melted butter on top. It's in oven...may be a disaster....Easy enough to make another batch. We had coors light but tall cans so I also measured that....Some of us aren't good a baking anything, so appreciate learning. Test number 1, hoping its edible. Ill remake a new one. THIS LOOKS SO GOOD, and no sitting to let rise.... Love that...Let ya know what happens

To test if the bread was done I stuck in a tooth-pick and it came out clean.

oh Jill! The funniest thing happened with your video and the ads. I clicked to watch your video. The video open with you holding a bottle of beer in one hand, and the bread recipe in another hand. Then it cut to a scene showing a close up of you pouring in beer into the bowl of flour. Around and around you were going, the thick foamy liquid just pouring and bubbling out. Meanwhile a banner advertisement popped up. It was bright red. And in the middle of the banner were two sentences, all in large white letters. Something along the lines of "guaranteed to Kill Lice" in the first sentence, with the brandname logo "vamousee" in small letters all the way to the left. Second sentence referred to a "mousee" - like a hair product maybe? For a few confused seconds there, I thought The Director, (Hi there!), was making a joke with a text caption addition. Took a few moments for me to realize it was advertising a lice removing hair product in the form of a "mousee" as they call it.. LOL! Best laugh I've had in a few days....
How funny is that! Yep -- you never know what sort of commercials might pop up on a video. Ick....lice!!!

You can but the bread might be a bit drier. Maybe cut it back to 2 tbls,?

About 15 or 18 years ago I had a recipe that called for beer and pancake mix and that was all. Seems like it was some kind of a whole wheat pancake mix. I don't remember what brand and I don't remember the measurements. Can anyone help me? By the way I think the beer you're using is too expensive. Some cheap brand would work just as well.
